Ingredients
- 2 tablespoons vegetable oil divided
- 1 lb pork tenderloin cut into small pieces (453 g)
- ¼ teaspoon sea salt
- ¼ teaspoon ground black pepper
- 1 cup frozen carrots and peas thawed (5.64 oz | 160 g)
- 1 teaspoon minced garlic
- 1 small white onion
- 2 eggs lightly beaten
- 3 cups cooked rice 23.80 oz | 675 g
- 3-4 tablespoons soy sauce
- Green onions to garnish
Instructions
- Heat a heavy pan or wok with 1 tablespoon of oil over medium high heat. Season pork with salt and pepper. Sear for 5 minutes until cooked through. Remove and set aside.
- Turn heat to medium and add 1 tablespoon of oil to the same pan or wok. Sauté carrots and peas with garlic and onion. Cook until the onion is tender. Push them to the side of the pan. Pour eggs on the other side and scramble into tiny pieces with a wooden spoon. Mix with the vegetables.
