How to make the Chicken Egg Roll Cups 

Now that you have got all of the ingredients together let’s make the Chicken Egg Roll Cups

Step one: Preparation is key 

One of the first things you will want to do is gather all of your ingredients together. This makes the whole cooking process so much easier. Preheat your oven to 375 degrees. You will want to use muffin tin to help you create the eggroll cup. Use one of the tablespoons of vegetable oil you have separates to brush the inside of the muffin cup to avoid the wonton wrappers sticking to the edges when cooking. 

Step two: Creating the crispy cups

Get your wonton wrappers and begin to layer two winter wrappers inside each cup and brush them with oil. Once you have filled your muffin pan you will want to bake the egg roll wrappers for 5 minutes until they begin to go golden brown.

Step three: Time to create the filling 

Get yourself a large skillet and use the remaining two tablespoons of oil and heat it up. Add the chicken and season it with your garlic powder, pepper, ginger, and soy sauce. Saute the chicken until it is cooked all the way through. This means there is no pink in the middle of your chicken pieces. Add the coleslaw mix to the chicken and give it a good mix. Continue to cook until the cabbage and the carrots have softened. Remove the skillet from the heat at this point. 

Step four: Assembling the chicken egg roll cups

Now that you have created the filling it is time to assemble the egg roll cups. Taking your crispy wonton shells fill each of them with the chicken mixture. Make sure to evenly distribute the filling. Once you have done this return to the oven and bake for around 5-8 minutes. Bake until the wonton wrappers have turned golden brown and are crispy. Variations to try

Sometimes it is nice to vary things, know what you can substitute, and try new flavors. So I thought I would share with you some of the variations that you might want to try with this recipe. 

  • Could you use rotisserie Chicken instead? Absolutely. Just skip the step of cooking the chicken as it is already cooked and season the coleslaw mix with all of the flavors and add the shredded chicken at the end to warm through. Then carry on with the recipe. 
  • Adding cheese to this could be a great addition. Things like cheddar cheese will add some flavor whereas mozzarella cheese will be great on the top just before you bake the wonton cup appetizers. 
  • Ground chicken or other meat like beef would also work well with this recipe and the flavors. You would need to cook the ground meat with the flavors and then continue with the recipe once it is cooked through. 
  • Want to make a game day themed version? You could make buffalo chicken wonton cups by using buffalo sauce as the main flavoring. Ideal with some ranch dressing on the side.
