These lip-smacking good apple pie pancakes are super simple to make and only require a few ingredients. Let’s take a peek at what you are going to need:

- Coconut Oil

HOW DO I MAKE APPLE PIE PANCAKES?
These vegan and gluten-free pancakes are super easy to make! There are just 3 simples steps.
STEP 1: PREPARE THE BATTER
Mix milk, maple syrup, oil, and vanilla together and set aside. In a large bowl, add flour, cinnamon, ginger, and baking powder until well combined. Pour milk mixture in the large bowl. Mix with a wooden spoon until you get a smooth oat batter.
STEP 2: COOK THE PANCAKES
Preheat a pancake machine or a non-stick pan greased with a bit of coconut oil or oil spray. Pour 1/4 cup of the batter to make 1 pancake. Cook until bubbles form and edges are starting to dry then flip and cook the other side. You will get 12 pancakes with the batter.

STEP 3: PREPARE THE APPLE PIE TOPPING, SERVE, AND ENJOY!
Heat a non-stick pot on medium heat. Melt coconut oil, then add cinnamon, apples and chopped almonds. Stir and cook for about 2 minutes. If you want apples to be softer, cook longer. Serve warm pancakes with apple pie topping.
CAN I MAKE THESE APPLE PIE PANCAKES AHEAD OF TIME?
Yes, it’s suitable to prepare and make the pancakes ahead of time. Additionally, you can also cook the apple pie topping in advance. However, you shouldn’t store the apple topping with the pancakes, or the pancakes will become soggy.
To save the pancakes, you can refrigerate them in an airtight container for up to 3 days. Keep in mind there aren’t any preservatives in them, so they will go bad faster than ordinary pancakes. Or you can flash freeze the pancakes and keep them in a freezer bag or container until you are ready to serve.
Reheat them in the microwave after they have thawed. Then, add the heated apple pie filling.
Keep the apple pie filling in a jar or container in the refrigerator until you are ready to serve.
ARE THESE APPLE PIE PANCAKES GLUTEN FREE?
Yes, these apple pie pancakes are, in fact, gluten free. The biggest thing you need to watch for is buying oat flour that has been certified gluten free. Oat flour is naturally gluten free, but sometimes there will be cross-contamination in the factory.
DO I HAVE TO USE OAT FLOUR?
No, you can substitute in regular all-purpose flour. However, if you want them to remain free of gluten, make sure to use a gluten-free all purpose flour like Bob’s Red Mill.
WHY USE SOY MILK TO MAKE APPLE PIE PANCAKES?
I use the soy milk because that is what I had on hand. I also wanted to keep this Apple Pie Pancake recipe vegan. You could use other plant based milk like, Oat Milk, Almond Milk or Coconut Milk. If you are not vegan, you could also use plain whole cow’s milk.
