This is corned beef recipe is such a simple dish to prepare, but it is packed with flavor! Here is what you need to do to make this traditional Irish dish in the slow cooker.

Step 1: Prepare vegetables and place them in the slow cooker

Start off by slicing an onion into wedges and cutting the baby red potatoes in half. Place the onions, potatoes and carrots in the crock pot. The add water.

Step 2: Add corned beef and cook

Lay the corned beef on top of the vegetables. Pour the apple cider over the meat, then add seasoning packet from brisket Cover the slow cooker and cook on low for 7 hours.

Step 3: Add cabbage wedges and continue to cook

Remove the lid and place the cabbage into the slow cooker on the sides of the corned beef. Re-cover and continue cooking for another hour or until the cabbage is tender.

Step 4: Serve and enjoy!

Remove corned beef from crock pot and slice or take 2 forks and shred into large chunks (whichever is preferred). Return corned beef to crock pot and keep warm. Serve with cabbage and other vegetables.

  • 4 cups water
  • 4 pound 4 pound corned beef brisket with seasoning packet
  • ¼ cup apple cider vinegar
  • 1 small head cabbage cored and cut into large wedges

Instructions

  • Place the carrots, onion, and potatoes in the bottom of the slow cooker crock. Add the water.
  • Lay the corned beef on top of the vegetables. Pour the apple cider vinegar over the meat. Top with the seasoning packet form the brisket
  • Cover the slow cooker and cook on low for 7 hours.
  • Remove the lid and place the cabbage into the slow cooker on the sides of the corned beef. Re-cover and continue cooking for another hour or until the cabbage is tender.
  • Remove corned beef from crock pot and slice into pieces or take 2 forks and shred into large chunks (whichever is preferred). Return corned beef to crock pot and keep warm. Serve with cabbage and other vegetables. Ladle juice on top.
