Summer is in full swing and I am loving it! I have been enjoying every second of outdoor time that I can get right now. This includes doing a lot of open water swimming and cycling in some of my favorite places. It is also the time of year where I spend a lot more time with my friends as we enjoy summer barbecues together with our families. As much as I love cooking, baking and entertaining, I tend to back off during the summer months as I want to be outside not in the kitchen.

So, this is where the summer charcuterie platter comes into play. I absolutely love creating them as they are so easy to make and require zero to minimal cooking. It is also an amazing way to use fresh veggies in the garden by arranging them to curate a beautiful platter.  There is something just so inviting about a colorful charcuterie tray. They are perfect for guests to graze on at an afternoon pool party or weekend barbecue.

What to Include to Create the Perfect Summer Charcuterie Platter

Charcuterie, by definition, is the art of preparing and assembling cured meats. However, most charcuterie boards or platters include more than just cured meats. Often times, they are made up of cheeses, nuts, jellies, fruits and veggies that compliment the meats. In my Summer Charcuterie Platter, I combined seasonal fruits and veggies along with cured meats, cheeses, and Almond Nut-Thins® crackers that I purchased at Shaw’s grocery store.

Ingredients

  • Bing cherries
  • Seeedless green grapes
  • Rainier cherries
  • Blackberries
  • Mango slices
  • Strawberries
  • Blueberries
  • Dried cranberries
  • Herbed goat cheese
  • Provolone cheese slices
  • Genoa Salame
  • Soppressata Salame
  • PepperJack Cheese Nut-Thins ®
  • Hint of Sea Salt Nut-Thins®
  • Cheddar Cheese Nut-Thins®
  • Roasted corn salsa
  • Roasted asparagus tips
  • Kalamata olives
  • Cherry tomaotes
  • Baby cucumber slices
  • Sweet mini peppers

Instructions

  1. Arrange all ingredients decoratively on a board or platter
  2. Serve & enjoy!
