Coconut Raspberry Bars

These Coconut Raspberry Bars are easy to make and so delicious! They are made with a combination of brown sugar, raspberry jam, coconut and pecans in 3 tasty layers. The Coconut Raspberry Bars are a great treat in the afternoon with tea or coffee. They also make a perfect grab and grow snack.

My kids and I have been doing a lot of baking  and cooking together this week! It is such a fun activity to keep them busy while we are stuck at home. Yesterday, they had fun helping me make Homemade Pancake Mix in a Jar. Earlier this week, we made Easy Lemon Blueberry Scones  and Bird's Nest Cookies. 

So, today we decided to try something new and we came up with these Coconut Raspberry Bars. The sweet and crunchy combination in this bar style treat really hit the spot!

How do I make the Coconut Raspberry Bars?

There are 3 layers that you will make for this bar dessert recipe: Crust, Center and ToppingThis may sound a little complex, but trust me, it comes together quickly!

To Start: Preheat the oven to 350 degrees. Grease an 8x8 inch baking dish and set aside.

For the Crust: In a large bowl, stir together the flour, brown sugar, salt and baking powder. Then, work in the butter to the flour mixture with 2 forks or a pastry blender if you have one. Once coarse crumbs are formed, press this into the bottom of the prepared baking dish.

For the Center: All you have to do here is spread the raspberry jam evenly over the crust.

For the Topping: Whisk together the eggs in a large bowl. Then, stir in the brown sugar and vanilla. Once it is well combined, stir in the coconut, pecans, flour, baking powder and salt. Stir until evenly mixed and Spread the topping over the center layer of raspberry jam. 

Now, time to pop in the oven and bake at 350 degrees for 40 minutes or until the top starts to slightly brown. Remove from oven and cool completely before cutting.

*Pro Tip: The Coconut Raspberry Bars will be easiest to cut if you refrigerate them for a few hours first. Make sure to use a sharp knife and they can be cut into 9 large squares or 12 slightly smaller squares. Please note: The nutritional information is for the 12 smaller squares.

What should I serve with the Coconut Raspberry Bars?

As I mentioned, it is best to refrigerate them before cutting them. However, after they are cut into squares, I like to warm the square up in the microwave for 5 to 10 seconds. They are quite delicious all by themself with coffee or tea. My kids enjoy them with whipped cream on top or a side of vanilla ice cream.

Can I store the bars?

Yes, after the Coconut Raspberry Bars are cooled and cut, they can be stored in an air tight container in the refrigerates for up to 5 days.

  2. This looks so exceptionally yummy - I am drooling thinking about making this for Easter weekend. We’ve never actually made this before, I don’t even know if I’ve tasted it before. But it looks soooo good! We love to bake but we definitely have to start trying new things like this!
