The kids and I are on a popsicle kick right now. Can you blame us? The weather has been super hot, and we love cooling down with a popsicle in the evenings. Those days when you are just about melted by the sun, and the heat is bad all you can do is sweat, you have to get creative to cool down. Popsicles are a great way to cool off and feel refreshed.

If you have kids or grandkids that love spending time with you in the kitchen, making popsicles is an excellent idea for you. My kids have gotten really creative, making popsicles, and they are always eager to help me. They love making their own varieties and adding their unique spin on everything. WHAT MAKES COCONUT CREAM CHIA PUDDING POPSICLES HEALTHY?

It feels so good to eat popsicles that also happen to be very good for you too. You don't' need to worry about a bunch of additives or preservatives, either. Just good wholesome ingredients that are tasty and good for you. I wanted to take a second to point out the nutrients you will get from these chia pudding popsicles.

Chia Seeds: We need to start with chia seeds because they are the star of the show in these popsicles. Chia seeds are packed with protein, good fats, fiber, iron, calcium, selenium, and more. If you love chia seeds, try my Vegan Blueberry Chia Pudding.

HOW DO I MAKE COCONUT CREAM CHIA PUDDING POPSICLES?

I am a popsicle making fanatic in the hot summer months because they are so easy! Take a peek at how quickly you can make them:

STEP 1: PREPARE THE CHIA SEEDS

Mix chia seeds and water in a bowl and let soak for about 10 minutes. Add coconut cream and agave syrup to chia seeds and mix well.

STEP 2: FILL THE POPSICLE MOLDS

Add 1 tablespoon coconut chia seed pudding in each mold. Add some coconut chips and place strawberry slices on top by pressing against the mold with your fingers. Then, fill with chia pudding to the top of the molds.

STEP 3: FREEZE THE POPSICLES AND ENJOY

Place popsicle sticks in the middle and freeze for about 6 hours or overnight. Serve cold.

CAN I USE DIFFERENT SWEETENER INSTEAD OF AGAVE SYRUP?

Yes! If you don't have any agave or just don't care for the flavor, you can make some easy swaps that will taste great. Using good-quality honey as a sweetener is a fantastic option and tastes so yummy. Sometimes, we will use pure maple syrup as well. Try making them with whatever sweetener you prefer, and you shouldn't have any trouble.

IS IT OKAY TO USE OTHER FRUITS?

Yes, it's more than fine to trade the strawberries for something else you enjoy. We love blueberries, peaches, raspberries, blackberries, and mango too. Feel free to experiment to see what you like best.

SO TELL ME…

Have you tried chia seeds before? If so, what did you think of them? What's your favorite flavor of popsicle? Have you made homemade popsicles before?
