It’s no secret that I love a good salad! Some days, I enjoy a salad loaded with fresh veggies. Other days, I might enjoy one that is lighter and contains fruit. Lately, I have been going for anything quick and easy to make! So, this Caprese Salad with spinach has become one of my favorites as it takes less than 10 minutes to prepare.

I just love the combination of juicy tomatoes with creamy fresh slices of mozzarella! Add it to a bed of fresh spinach, then top it off with olive oil and balsamic vinegar. It’s so easy to make and the tanginess of the simple dressing is the perfect addition.

WHAT DO I NEED TO MAKE CAPRESE SALAD WITH SPINACH?

This fresh salad only needs 7 ingredients. It is so simple to put together, yet loaded with flavor.Here are the ingredients you will need to make the Caprese Salad with Spinach:

HOW DO I MAKE CAPRESE SALAD WITH SPINACH?

STEP 1: PREPARE THE TOMATOES, CHEESE, AND SPINACH

Slice the Roma tomato, mozzarella, and fresh basil leaves. In a bowl or on a plate, add the fresh spinach. Then, alternate the tomatoes and mozzarella slices on top.

STEP 2: ADD THE BASIL AND TOPPINGS

Place the sliced basil over the tomatoes and cheese. Sprinkle a little salt and pepper over the tomato, cheese and basil. Serve with balsamic vinegar and olive oil drizzled on top (or dressing of choice).

IS CAPRESE SALAD HEALTHY?

Oh, yes! This Caprese salad is very healthy! It’s loaded with good for you nutrients to help power you through the day. It’s great to replenish your energy and will keep you full, but not overly stuffed. Some of the nutrients you get in the salad are vitamin A, vitamin B6, vitamin C,  vitamin K, calcium, folate, copper, and vitamin E. So when you are craving something that’s healthy and delicious, this is perfect for you.

WHAT SHOULD YOU SERVE WITH CAPRESE SALAD?

The salad is super versatile and can be enjoyed the way it is or with other foods as well. Here are a few ideas you might like to try out:

  • Meats – Whether you are craving steak, chicken, or salmon, you can rest assured that some Caprese salad will finish the meal. Cook the meat as you usually would and serve it with a side of this salad. Incredible!
  • Sandwich – You can even take the ingredients of the salad and put them into a sandwich, which is so yummy and filling. Use some Italian or French bread and slice it. Add in the spinach, tomato and mozzarella slices. Then, sprinkle on the basil, salt and pepper to taste and drizzle on the Balsamic vinegar and oil. I love making this when I want something a little more filling or lunch!
  • Pasta – Another great idea is to prepare your favorite pasta dish and serve the salad with it. It makes a great side salad with my Cheesy Beef and Noodle Casserole.

HOW DO YOU STORE LEFTOVERS?

Whenever possible, it’s best if you don’t add the oil and balsamic until you are ready to eat the salad. Otherwise, the spinach may become wilted and not as appealing. Any leftovers should be stored in the refrigerator in an airtight container. They will last 1-2 days combined or 4-5 days if the ingredients aren’t stored together.

Ingredients

  • 2 cups fresh spinach
  • 1 Roma tomato
  • 8 oz fresh mozzarella ball or log
  • 2 leaves basil
  • salt and pepper to taste
