Step Three: Prepare the Salad

While the chicken is baking, chop the lettuce and red cabbage and toss it into a bowl. Then, add the sliced onion and feta cheese. In a small bowl, whisk together the olive oil, minced garlic cloves, salt and pepper. Drizzle over salad mix. Toss to mix the salad ingredients together and to coat all the pieces with oil and seasoning.

Step Four: Add the Chicken

When the chicken is finished baking, allow the pieces to cool slightly. Then, add the baked chicken to the salad. Stir to mix the chicken into the greens, then enjoy!

How Do You Store BBQ Chicken Salad?

This delicious and flavorful salad is best when it's served right after you prepare it. So, if you don't think you'll be able to eat the entire salad at once, it's best to store the salad ingredients and chicken separately.

The chicken can be transferred to an airtight container and placed in the refrigerator for up to four days. To reheat the pieces, bake them in the oven at 350 degrees or warm them in the microwave until heated.

To store the salad, combine the vegetables and cheese and place them in an airtight container. Avoid adding the oil, garlic, salt, and pepper until you're ready to eat the salad. The longer the oil sits on the lettuce and cabbage, the soggier the veggies will become.
