Happy Monday, I hope you had a great weekend! Fall has finally arrived here in Maine and I am really enjoying the cooler temperatures. This is my favorite time of year for running and spending time in the kitchen! I got to enjoy both of these things over the weekend. I went for a nice long run on Saturday, then came home and made a favorite snack: Almond Butter Cherry Chocolate Energy Bites. These quick and easy bite sized snacks help ward off the in between meals hunger after exercising.
“Hanger” is real!
Do you ever get hangry? Have you experienced Run-ger? I know people joke about it, but it’s a real thing! As my Ironman training ramped up this past Summer, I had more than a few episodes of hanger. You can ask my kids all about it (although finding homemade slime stuck all of the kitchen cabinets could have been the cause too). In an effort to avoid these unpleasant moments, I try to snack a little more throughout the day. However, I am try to balance it out to avoid overeating too, which can easily happen after a century ride. “Hey, I biked 100 miles, I deserve to eat an entire pizza and a bucket of candy” Ummm, not necessarily!
Almond Butter Cherry Chocolate Energy Bites
So in my effort to not eat everything in the house, I make sure to carry along nutrient dense snacks to help curb my appetite throughout the day. One of my favorites are these Almond Butter Cherry Chocolate Energy Bites. They are so quick and easy to make and a bonus is that my kids love them too!
Ingredients
- 2 Cups Old Fashioned Oats
- 1/2 Cup Dried Cherries
- 1/2 Cup (Milk or Dark) Chocolate Chips
- 1 Cup Creamy Almond Butter
- 1/2 Cup Shredded Coconut
- 3/4 Cup Honey
- 2 Tbsp Coconut Oil, melted
- 2 tsp Vanilla Extract
Instructions
- Place all ingredients in a large bowl and mix until ingredients are well combined.
- Then, take about 1 1/2 Tablespoons of the mix at a time and roll between hands to form into balls and refrigerate until firm.
