Favorite Vegetarian Soups

Baby it's cold outside! Of course, it is the dead of winter here in Maine, so that is to be expected. One of my favorite things about this time of year is making all kinds of hot and delicious soups and stews. My family loves soup and sandwich night too, so it makes everyone happy when dinner time arrives. I poured through all of my favorite soup recipes for this week's post. I have so many, that I decided to  break it down into two posts. This week I am sharing my favorite vegetarian soups. Here they are:






1.Quibebe: A Butternut Squash Stew from Brazil: I love the ginger and chili flavors in this soup from Lydia's Flexitarian Kitchen. It makes a perfect one dish meal served over white or brown rice.

 

2. Potato Leek Noodle Soup: from Erica's Recipes is another great one dish meal, as it is a hearty soup filled with veggies and delicious served with some warm bread or biscuits.

 

3. Vegetarian Taco Soup: from I Heart Vegetables is so flavorful and tasty topped with the beloved avocado! I serve this up with a side of Quesadillas and it is a family favorite! Click <here> for Quesadilla Recipe.






 

4. Smokey Tomato Orzo Soup with Chickpea Croutons: from Confessions of a Mother Runner is a new favorite of mine that you must check out!

 

5. Healthy Vegetarian Crockpot Lentil Soup by Running in a Skirt is wonderful! I am a huge fan of anything I can throw in the crock pot, which makes this soup perfect.

6. Crock Pot Butternut Squash Soup:  from Create Kid's Club is another favorite crockpot soup! I serve this up with hot panini sandwiches.

 

7. Gluten Free Cauliflower Potato Soup: by Ilka's Blog is a quick and easy gluten free option that is great served with a salad.

  2. Ohh! I just published a veggie soup on my blog last week! Pumpkin :D :D :D -- I love all veggie soups, even though I am not specifically vegetarian... because it's the backdrop for my adding some sort of animal protein to the mix!
  3. Potato Leek Noodle soup -- that sounds yummy! I actually haven't been making as many soups as usual this winter because it's been so mild much of the time.
