I must confess, I LOVE oatmeal! It doesn’t matter if it’s Oatmeal Banana Chocolate Chip Cookies, Banana Bread Overnight Oats, or a bowl of oatmeal; I know I am going to enjoy it.

With fall weather here, I knew that I wanted to do something with my beloved oatmeal and give it a pumpkin spice spin. I have been making Instant Pot Pumpkin Oatmeal for a while, but I wanted to go back to traditional methods and make this homemade pumpkin oatmeal on the stovetop. Of course, I love how oatmeal tastes, but one of the main reasons why I enjoy it so much is because it fuels me for a busy day!

WHAT DO I NEED TO MAKE HOMEMADE PUMPKIN OATMEAL?

This vegan oatmeal recipe is so quick and easy to make! There are just 9 ingredients needed to make this hearty homemade breakfast.

Shredded pumpkin, oats, vegan butter, agave syrup and turmeric.

HOW DO I MAKE HOMEMADE PUMPKIN OATMEAL?

With just a handful of ingredients and a few minutes, you can enjoy a hot bowl of oatmeal in no time. I am certain you are going to love it!

STEP 1: MELT THE BUTTER & ADD SPICES

Melt vegan butter (or coconut oil) in a saucepan over medium heat. Add spices and shredded pumpkin and mix them together.

STEP 2: MIX IN THE OATS AND SWEETENER

Stir in oats, water, raisins, and agave syrup (or maple syrup) and cook until creamy, approximately 10 minutes. 

STEP 3: PLACE IN SERVING BOWLS, ADD TOPPINGS, AND DEVOUR!

Remove from heat and divide into 2 bowls. Serve with your favorite toppings.

DO I HAVE TO USE VEGAN BUTTER?

No, it’s not required to use vegan butter. I eat vegan recipes a lot, so I usually keep vegan butter on hand. However, you can replace it with regular unsalted butter if you’d rather. Another great substitute, as mentioned in the recipe is coconut oil!

WHY ADD TURMERIC?

Turmeric is a spice often used in savory Indian cuisine. It has many known health benefits, including acting as a powerful anti-inflammatory agent. Turmeric has also been touted to be beneficial for a number of other health issues from gastrointestinal illness to arthritis. I love adding it to recipes to give them a healthy boost!

CAN YOU SAVE LEFTOVER OATMEAL?

Yes, if you can’t eat all of this homemade pumpkin oatmeal, you can let it cool and put it in an airtight container. It will last in the fridge 3-5 days in the fridge. You can simply reheat it in the microwave. I recommend adding a little bit of water or non-dairy milk when reheating it, so it’s not too sticky.

HOMEMADE PUMPKIN OATMEAL VARIATIONS

There are many fun flavors you can add to the oatmeal if you want. Here are a few ideas to consider trying out. 

  • Chocolate – Add a few chocolate chips to the cooked oatmeal. Pumpkin and chocolate go together beautifully. Yum! Don’t forget to try out my Chocolate Chip Granola Bars too. 
  • Dried Fruit – While I like to add raisins, you could also add dried cherries, cranberries, or any other dried fruit you like. I recommend cutting it into bite-sized pieces first. 
  • Nuts – Add some of your favorite nuts on top. They are crunchy and enhance the flavor as well. Almonds and pecans are my favorites, but you could add walnuts or hazelnuts as well. 
  • Milk – You could swap the water for any dairy or non-dairy milk to add some extra creaminess.
