Happy Monday, I hope you had a great weekend! I had a busy "Hockey Mom" weekend as my son was in a tournament and played in 5 games over the past 3 days. It made it tricky to squeeze in my triathlon training, but I got it done. I made a goal to not miss workouts so I am really trying to stick to it! Another goal I made is to serve up more plant based meals this year. In fact, I started out the month of February by challenging myself to stick to a plant based diet for 2 weeks. I knew the biggest challenge would be: "What do I make for dinner for everyone?" So, once again, I called upon my favorite bloggers for their tried and true recipes.
