What do I need to make the Vegan Chili Mac?
This vegan pasta recipe is so simple to make and you will likely have most of the ingredients already in your pantry. Here is what you will need to make this vegetarian chili dish.
- Olive Oil: Use a high quality extra virgin olive oil to sauté the onion and garlic in. I like to use Pompeian
- Red Onion: I love the flavor of red onions, especially when they are sautéed. However, you can use a white or yellow onion in this recipe.
- Garlic: A real time saver for me is to use prepared minced garlic. I always have a big jar in the refrigerator and scoop out a teaspoon or two to add to different recipes.
- Chili Powder:This recipe calls for a tablespoon of chili powder, but feel free to add a little more or a little less depending on flavor preference.
- Cumin
- Cayenne Pepper: The cayenne pepper adds a little heat to the dish. If that is not your thing, just omit it. If it is your thing, add more!
- Salt
- Vegetable Broth
- Ziti Pasta: I used Ziti because that is all I had on hand, although traditionally this is made with macaroni. However, any kind of shaped pasta will work. Rigatoni, fusilli and tagliatelle are all good options!
- Diced Tomatoes: Canned, dice tomatoes with their juice are a great base to this dish.
- Kidney Beans: Drain and rinse the kidney beans before adding them in to the pot.
- Corn: I used canned sweet corn and drained it. However, you could also use frozen sweet corn.
- Tomato Paste: The tomato paste adds some extra flavor to this dish.
- Vegan Cheese: I used Daiya shredded cheddar cheese for this recipe, but feel free to use your favorite brand or it can even be omitted.
- Cilantro: A little fresh cilantro makes a great garnish!

How do I make the One Pot Vegan Chili Mac Recipe?
I love that this simple vegan dinner recipe takes only 30 minutes to make and it can be made in one pot. There are just a few simple steps to preparing this delicious meal. Here is what you will need to do.

Step 1: Sauté Onions and add spices
Place a large stock pot on the stove top, add olive oil and heat over medium until olive oil warmed. Then, add onion and sauté until tender. Next, add garlic, chili powder, cayenne, cumin and salt. Stir for 30 seconds to bring out the essence of flavors.

Step 2: Add broth, pasta, tomatoes, beans and corn and boil
Add vegetable broth to pot and stir. Then, stir in the pasta, diced tomatoes, kidney beans and corn. Bring to a boil, then turn the heat to low and simmer, uncovered for 15 minutes.

Step 3: Add in Tomato Paste to Vegan Chili Mac
Add tomato paste and stir well. Cook for another 5 minutes on low heat or until pasta is tender.

Vegan Chili Mac
Ingredients
- 2 tablespoons olive oil

- 4 cloves garlic finely chopped

- 2 teaspoons cumin powder

- 15 ounce kidney beans drained and rinsed
- 1 cup sweet corn drained and rinsed
- 1 cup tomato paste
- 1 cup vegan cheese crumbled or shredded
- ¼ cup fresh cilantro chopped for garnish
Instructions
