Weeknights can be so hectic, especially during the summer months. I hate to sacrifice time at the beach or outside after work to be in the kitchen. As much as I enjoy cooking, I like to keep it simple in warmer weather. We typically eat later as my kids spend more time outside with the extended daylight hours. So, I came up with a few tips for quick and easy weeknight meals to share!
Tips for Quick and Easy Weeknight Meals
Keep your Kitchen Clean
Keeping a clean kitchen can really help speed up any weeknight meal. I know the last thing I want to do is unload the dishwasher or clean out a pot when I am in a hurry! So, having things tidy and ready to go can really help to make weeknight cooking go faster.
Make a Plan
Meal planning at the beginning of the week is key! I find it very helpful to sit down on Sunday and look at everyone’s schedule to determine how much time is available for cooking dinner. It is also a great time management tool to go to the store and get the ingredients for each meal in one trip.
Meal Prep
Once you have your weeknight dinner plan set, meal prep can make cooking so much easier. I take a block of time on Sunday and prep whatever I can for the weeknight meals. Chopping up fresh veggies and storing them in containers, so they are ready to go is one of my favorite time saving tips!
Double it Up
When making meals that might take extra time, double it up! Things like lasagna or my recipe for garden fresh minestrone are perfect to make in large batches. Then, I store them in the freezer for nights when there is little time for cooking.
Make it a Pizza Night!
Pizza night is a family favorite and it definitely makes weeknight meals convenient! I recently discovered American Flatbread Pizza in the freezer section at Hannaford. The delicious flavors and high quality ingredients in the pizza really caught my attention, so I had to try them out! The crust of the pizza is made from organically-grown wheat and it is so light and delicious. The sauce is made of a combination of organic veggies, red wine, and olive oil and is so tasty! I also love all of the unique flavor combinations of the varieties of these pizzas. They have become a staple in our freezer as they are so convenient, but do not compromise on quality or flavor. We always make a few varieties of pizza. It is fun to spruce them up with extra ingredients like olives, sautéed mushrooms, and fresh veggies from the garden. Here are a few samples from our pizza night last Friday.
My son loves the American Flatbread Uncured Pepperoni & Uncured Bacon Pizza. He added sausage, kalamata olives, and diced pancetta.
My husband and daughter are big fans of the American Flatbread Basil Pesto & Feta Pizza. They simply picked some cherry tomatoes from the garden to slice up and top the pizza.
The American Flatbread Vegan Harvest is my go-to pizza choice. I sautéed some fresh garlic, bella mushrooms, and onions to put on top. It was amazing!
