I love using carrots in all types of recipes like my Healthy Carrot Apple Ginger Soup recipe or my kid's favorite Carrot Cake Breakfast Cookies. However, sometimes I just like to have them as a side dish. These Instant Pot Carrots are so delicious and easy to make!

All you really need to do is toss everything in the Instant Pot. Within less than 20 minutes, you will have cooked, tender baby carrots with a delicious brown sugar and herb glaze. The entire family loves this easy side dish!

How do I make the Instant Pot Carrots?

There are just 2 steps to make this flavorful side dish!

Step 1: Put the Ingredients in the Pot

It does not get much easier than this! Put the baby carrots in the Instant Pot. Add the water, brown sugar, minced garlic, dried parsley, salt, and pepper. Stir everything to combine. Then, top with 4 Tablespoons of butter.

Step 2: Cook & Serve!

Next, just put the lid on the Instant Pot and set to pressure cook for 5 minutes. Note: It will take about 10 minutes for pot to pressurize.  When the cook time is up, do a natural release. Then give the carrots a stir to coat with the glaze before serving them.

Can I store the carrots?

Yes, they can be kept in a covered container for up to 5 days in the refrigerator. They can be warmed back up in the microwave or on the stove top. However, these carrots are best served immediately.

Do I need to use brown sugar?

No, if you simply want carrots without a glaze, just add them to the pot with water. I would suggest adding butter, salt and pepper to taste to add a little flavor.

What other spices can I use?

As with most of my recipes, this is a very simple version. Feel free to try variations! Some other ideas: Spice them up with a dash or 2 of cayenne pepper and a little cumin. If you are looking for more sweetness or a thicker glazer, add a little more butter and brown sugar. There are number of ways to get creative with this recipe.
