How Do I Make Frozen Lime Pie?

Once you have all your ingredients gathered, you can start preparing your pie. And since this recipe is so simple to make, you’ll only need to follow three quick steps to it together:

Step One: Prepare the Crust

Preheat the oven to 350 degrees and prepare a springform pan by spraying it with nonstick cooking spray. In a large bowl, combine the graham cracker crumbs and melted butter. Stir until the crumbs begin to stick together.

Transfer the graham cracker mixture to your springform pan. Press the crumbs into the bottom of the pan and up the sides until firm. Bake the crust for 8 to 10 minutes, until it’s golden brown.

Step Two: Mix the Filling

While the crust is baking, prepare the filling by pouring the condensed milk, evaporated milk, lime juice, and lime zest into the pitcher of your blender. Blend until the mixture is smooth. 

Step Three: Freeze the Lime Pie

Allow the crust to cool slightly, then pour the lime pie filling over the top of the graham cracker crust. Transfer the pie to the freezer and store overnight or until the filling is frozen solid.  Once the filling is solid, carefully remove from springform pan, slice and serve. Store pie leftover pie in freezer for up to one week.

While the amount of juice and zest in one lime can vary depending on the size of your fruit, one regular sized lime typically produces around 2 tablespoons of juice and 2 teaspoons of lime zest.

How to Zest a Lime

Fresh lime juice and lime zest are the best way to add citrus flavor to your frozen pie. But if you’ve never used lime zest before, you may be wondering what’s the best way to zest a lime. Lime zest is simply shavings of the colored portion of the fruit’s peel. So, to zest your lime, you just need to shave off that flavorful exterior.

There are a few different tools you could use to zest your lime, depending on what you have in your kitchen. A zester is the best option for getting fine shavings off the peel. But you could also use a microplane or the fine holes on a box grater to zest your citrus peel.

If you’re using a microplane or zester, hold the handle of the utensil in one hand and place the end of the tool on a flat surface, holding the tool at an angle. Hold the lime in the other hand and slowly drag it down over the holes. Continue rotating the fruit as you zest, making sure to only shave the green part of the skin.

You can also use your box grater to zest your lime. In that case, place the box grater on a flat surface and hold it steady by placing one hand on the handle on top. Use the other hand to slowly drag the lime down over the side with the smallest holes. Continue grating the lime, rotating as you go, until all the peel has been zested.

Ingredients

  • For Crust:
  • 2 cups graham cracker crumbs
  • 8 Tablespoons butter melted (You can add ½ Tablespoon more if you feel the crumbs are too dry when preparing the crust)
  • For Filling:
  • 2 Cans - 14 Oz Condensed Milk
  • 2 cans 12 Fl. Oz Carnation Evaporated Milk
  • 1 cup of Lime juice Lime zest of one lime
  • Optional for Garnish: Mint leaves lime slices, lemon slices, berries, and whipping cream or Whipped Cream. (Flavor wise, this is unnecessary, this is more for decorating)

Instructions

For the crust:

  • Preheat the oven to 350 degrees Fahrenheit. Spray a 9 inch spring form pan with non-stick cooking spray and set it to the side.
  • Prepare the crust by mixing the graham cracker crumbs, salt, and the melted butter together in a medium sized bowl..
  • Gently press the mixture using the back of a spoon to form the crust inside the prepared spring-form pan.
  • Bake st 350 degrees Fahrenheit for 8 to 10 minutes or until golden brown.
  • Remove from oven and cool on wire baking rack.

For the filling:

  • To prepare the filling, add the condensed milk, evaporated milk and lime juice into a blender. Blend until smooth.
  • Pour the milk and lime juice mixture into the cooled graham cracker crust in the spring form pan.
  • Place in the freezer until frozen, 6 to 8 hours or overnight.
  • Garnish with whipping cream, lime slices, mint leaves and/or fresh berries, if desired
  • Serve right away. If you want to store it, make sure you place it back in the freezer.
