How to make Red Velvet Cookie Bars

Now that you have got all of the ingredients together, it’s time to make this easy cookie bar recipe.

 Step one: Start the preparation

Start off by preheating the oven to 350 degrees Fahrenheit. Get a 9×13 inch pan and place a piece of parchment paper inside and spray with non-stick spray. This will prevent the cookie bars from sticking to the tin.

Step two: Make the cookie bars

Grab a large bowl and get your chosen red velvet cake mix and add the vegetable oil and eggs to the mix. Make sure you give the ingredients a good stir to ensure they are combined. You could use a hand mixer for this. Once you are happy with your red velvet cake mixture, pour it into your prepared baking pan. Make sure you spread and press it down to evenly distribute it. Bake in the oven for 20-25 minutes until the edges are golden brown.

Step three: Time to decorate

Once the cookie bars have baked for long enough they need some time to cool. Be careful when handling the baking pan and removing the cookie bars. Add it to a wire rack and allow it to cool completely. Spread the cream cheese frosting in an even layer across the top of the cake when it is cool and decorate with sprinkles. You can cut it into squares using a sharp knife just before serving. Enjoy!

Recipe notes and tips

It doesn’t matter whether you are a seasoned pro in the kitchen or a novice, it is always a good idea to get some helpful hints and tips to help make things easy. No matter how simple it is there will always be some extra guidance. I have a couple of suggestions and notes that will help you when making this recipe.

  • The cookie bars need time to cool completely before you add the cream cheese frosting. Adding the frosting before it has had time to cool means that it will melt and make one big mess.
  • The baking pan will be hot so be careful when handling it from the oven.
  • If you have a quick recipe then you could always use homemade cream cheese frosting instead of a store-bought option.

Variations of Red Velvet Cookie Bars to try

Sometimes it is nice to vary things, know what you can substitute, and try new flavors. So I thought I would share with you some of the variations that you might want to try with this recipe.

  • You could use some food coloring and add some to the whipped frosting. Green and red food coloring are particularly festive but these red velvet cookie bars are perfect for other occasions.
  • An ideal sweet treat for valentine’s day, baby showers or baby sprinkles, and even birthday desserts. They are super tasty.
  • Why not add some edible glitter to make them sparkle? Perfect for your festive parties where these could be served.
  • You could use chocolate-flavored frosting for a different look and flavor. Another great addition would be milk or white chocolate chips. You could add them to the cake mix before baking. They will give you all of the vibes of chocolate chip cookies but with a crumbly cake texture. Yum!
  • oreo cookies make great decorations for these cookie bars. You could crumble them up and sprinkle them across the top, or chop a cookie in half and stick it into the frosting.
  • Sprinkle some powdered sugar over the top for a simple finish instead of using frosting. They will still taste incredible.

If you have any leftovers of these tasty cookie bars then you will want to store them correctly in an airtight container. You can store them at room temperature or in the refrigerator. They will last 4-5 days at their best. You could also freeze these cookie bars. However, if you plan to do this freeze them after they have baked and cooled down. You can frost them when you are ready to enjoy them.

Sure! This is such a quick recipe that you could knock them up in the morning ready for the afternoon or the evening to enjoy. They will also keep really well in an airtight container so you could make them a day or two in advance.

Essentially to make a red velvet cake or cookie you are combining the flavor of vanilla extract with cocoa powder along with the other cake and cookie ingredients. Then, red food coloring is added for the signature color.
