Oyster Casserole

Happy Friday! I hope you are having a wonderful holiday season. Earlier this week, I shared a recipe for Hoppin' John, which is made from black eyed peas. My family and I eat a bowl of it every year on New Year's Day to bring luck for the incoming year. Today, I would like to share another food tradition (I have a bunch of foodies in my family), which is preparing an Oyster Casserole. We make this every year for either Christmas Eve or New Year's Eve. It is a wonderful dish to take to a holiday party as well. It is an elegant casserole, yet fairly simple to make.

Oyster Casserole

We make this oyster casserole every year for either Christmas Eve or New Year’s Eve. It is a wonderful dish to take to a holiday party as well. It is an elegant casserole, yet fairly simple to make.

  • 1 quart of fresh oysters, drained and juices reserved
  • 2 sticks butter
  • ¾ cup onion, chopped
  • ¾ cup celery, chopped
  • 10 cloves garlic, coarsely chopped
  • ½ cup mushrooms, sliced
  • 2 sleeves Saltine Cracker
  • ½ cup Panko Bread Crumbs
  • 1 ½ cups Half & Half
  • ¾ teaspoon Worcestershire Sauce
  • ¾ teaspoon Tabasco Sauce
  • ¾ teaspoon cayenne pepper
  • ½ teaspoon basil
  • ½ teaspoon ground ginger
  • ½ teaspoon cajun seasoning (optional)
  • ¾ cup cheddar cheese, divided
  • 1 teaspoon black pepper
  • 1 teaspoon salt

Instructions

  1. Preheat oven to 350 degrees
  2. Drain oysters and reserve juices
  3. Break up Saltine Crackers into big pieces in a large bowl, then add Panko Bread Crumbs and stir to combine
  4. In a large pan, melt butter over medium high heat
  5. Saute onions and celery in pan with butter until softened, approximately 5 minutes
  6. Add garlic and mushrooms, sauté for approximately 5 more minutes
  7. Add pepper, basil, ginger, cayenne pepper, cajun seasoning, Worcestershire Sauce, Tabasco and salt. Stir until combined
  8. Turn heat off, then add oyster juice, ¼ cup cheddar cheese, and Half & Half to warm pan, stir until combined
  9. Coat 9 x 13 dish with cooking spray
  10. Layer approximately ⅓ of cracker/panko mixture on bottom, then layer with half of fresh oysters
  11. Sprinkle with ¼ cup cheddar cheese
  12. Add a second layer of cracker/panko mixture, then layer with remainder of fresh oysters and sprinkle with ¼ cup cheddar cheese
  13. Add a third layer of cracker/panko mixture. Then, top with the Half & Half, oyster juice, butter & vegetable blend
  14. Bake at 350 degrees for approximately 35 minutes or until bubbling around the edges
  15. Serve warm with crackers or crusty bread

  1. I can't say that I enjoy oysters, but my Grandfather sure does. He requests Oyster Stew all the time, and this would be an easy way to get something to him that wasn't cooking all day!
  2. Oh I wish I could come over to your house and have you teach me how to handle oysters. I have always wanted to try making them, but the scary the crap out of me so I have stay far way and this recipes sounds so good!
  3. We do have our food traditions and now that I have seen oyster casserole, and when I share it with my husband, I am sure it will be come one of ours. This sounds and looks amazing.

  6. I've never tried an Oyster Casserole but it sure looks and sounds worth the try. We don't really have a traditional family recipe but we do a lot of native food cooking at this time of the year. Happy new year in advance!

  9. I really like fried oysters. The mix of ingredients here sounds like a flavorful dish. And yes black eyed peas are traditional for New Years...I love how my Mom cooks them.
  10. honestly i hate casserole I tried making it a few times but it never taste like my mom's cooking :/ but im definitely gon try this one if its the same result of tasting weird ill give my mom the recipe to prepare lol P.s im not a bad cook
  11. I had oyster casserole along time ago when I went home to eat at a friend's parents house during my younger military days. It was pretty good. I would be open to making this for my family.
  12. I don't really have any New Year's traditions, but some of my family is though. This recipe looks great and i would love to try it. My husband likes to have collards and black eyed peas, but I'm not a huge fan, so i just let him have his traditions lol!

  19. Our family tradition for New Year's Day morning is monkey bread for breakfast. Don't really know why, but I guess it's the kids wanting to eat really bad before I clean the cupboards of all the bad food and force them to start eating healthy! : ) This recipe looks delish!
