Oyster Casserole
Happy Friday! I hope you are having a wonderful holiday season. Earlier this week, I shared a recipe for Hoppin' John, which is made from black eyed peas. My family and I eat a bowl of it every year on New Year's Day to bring luck for the incoming year. Today, I would like to share another food tradition (I have a bunch of foodies in my family), which is preparing an Oyster Casserole. We make this every year for either Christmas Eve or New Year's Eve. It is a wonderful dish to take to a holiday party as well. It is an elegant casserole, yet fairly simple to make.

Ingredients

- 1 quart of fresh oysters, drained and juices reserved
- 2 sticks butter
- ¾ cup onion, chopped
- ¾ cup celery, chopped
- 10 cloves garlic, coarsely chopped
- ½ cup mushrooms, sliced
- 2 sleeves Saltine Cracker
- ½ cup Panko Bread Crumbs
- 1 ½ cups Half & Half
- ¾ teaspoon Worcestershire Sauce
- ¾ teaspoon Tabasco Sauce
- ¾ teaspoon cayenne pepper
- ½ teaspoon basil
- ½ teaspoon ground ginger
- ½ teaspoon cajun seasoning (optional)
- ¾ cup cheddar cheese, divided
- 1 teaspoon black pepper
- 1 teaspoon salt
Instructions
- Preheat oven to 350 degrees
- Drain oysters and reserve juices
- Break up Saltine Crackers into big pieces in a large bowl, then add Panko Bread Crumbs and stir to combine
- In a large pan, melt butter over medium high heat
- Saute onions and celery in pan with butter until softened, approximately 5 minutes
- Add garlic and mushrooms, sauté for approximately 5 more minutes
- Add pepper, basil, ginger, cayenne pepper, cajun seasoning, Worcestershire Sauce, Tabasco and salt. Stir until combined
- Turn heat off, then add oyster juice, ¼ cup cheddar cheese, and Half & Half to warm pan, stir until combined
- Coat 9 x 13 dish with cooking spray
- Layer approximately ⅓ of cracker/panko mixture on bottom, then layer with half of fresh oysters
- Sprinkle with ¼ cup cheddar cheese
- Add a second layer of cracker/panko mixture, then layer with remainder of fresh oysters and sprinkle with ¼ cup cheddar cheese
- Add a third layer of cracker/panko mixture. Then, top with the Half & Half, oyster juice, butter & vegetable blend
- Bake at 350 degrees for approximately 35 minutes or until bubbling around the edges
- Serve warm with crackers or crusty bread
