It's so hard to believe that fall is right around the corner! As much as I am sad to see summer go, there are so many things that I love about the changing seasons. One thing that tops my list is baking and cooking! The flavors of fall are my favorite and what would this time of year be without pumpkin?

So, in the spirit of flipping the calendar to September, I baked some healthy pumpkin cheesecake bites. These tasty treats are quick and easy to make. They are a perfect bite-sized treat for a party. My kids like them as an after-school treat and I enjoy them with afternoon coffee.  There are just 8 ingredients in the recipe:

First, preheat oven to 350 degrees. Prepare mini muffin tin by spraying with cooking spray. Next, add 2 pounds of vanilla Greek yogurt to a large bowl.

Then, add 3 eggs, one pack of instant pudding, 1 teaspoon of cinnamon, 1 teaspoon of pumpkin pie spice, and 3 tablespoon of sugar.

Last, add ½ tablespoon of vanilla and ¾ cup of canned pumpkin.

Whisk all ingredients together until well combined.

Add a heaping tablespoon of pumpkin mixture to each crevice in mini muffin tin. This may need to be done in two batches or in two separate mini muffin tins.

Bake at 350 degrees for 13-15 minutes, or until toothpick comes out clean when inserted into the center. Cool on wire rack before removing from pan.

Equipment

Ingredients

  • 3 eggs
  • 2 lbs Vanilla Greek Yogurt
  • 1 box Jello Cheesecake Flavored Instant Pudding 3.4 ounces
  • ½ tablespoon Vanilla Extract
  • ¾ cup 100% Pure Canned Pumpkin.
  • 1 teaspoon Pumpkin Spice
  • 1 teaspoon Cinnamon
  • 3 tablespoon Sugar

Instructions

  • Preheat oven to 350 degrees Fahrenheit.
  • Spray mini muffin tin with cooking spray.
  • In a large bowl, whisk together all of the ingredients.
  • Add a tablespoon of pumpkin mixture into a well greased crevice of a mini muffin pan. Repeat until all batter is used. This may have to be done in batches, or with more than one pan.
  • Bake for 13-15 minutes, or until a toothpick comes out clean.
  • Allow to cool before removing from a pan.

Notes

-For the ease of removal, use a very thin paring knife to loosen the sides by going around the edge of the whole cheesecake bite.
-If the cheesecake bites are really stuck, use a spoon to slightly grasp the bottom or place pan over a pan filled with hot water for a few minutes to help it loosen.
