School is back in full swing  and Halloween is just around the corner. The kids are still deliberating on what they will dress up as for the occasion. In the meantime, we had a little fun this weekend making a Halloween inspired appetizer.

Halloween Witch Chips and Guacamole

This is so quick and easy to make! Here is what you will need to create this adorable treat:

  • Avocados
  • Garlic
  • Roma Tomatoes
  • Onion
  • Lime Juice
  • Cilantro
  • Jalapeno
  • Blue Corn Tortilla Chips
  • Black Olives
  • Red Bell Pepper
  • Carrot Sticks

First, whip up your batch of guacamole. I used five avocados and mashed them in a large bowl with a potato masher. You can also mash them up with a pastry blender or fork. Then, I added the garlic, Roma tomatoes, onion, lime juice, cilantro and jalapeño and stirred until well combined. After the guacamole was made, I put it on a large plate in the shape of a face. I made the "chin" pointy to make it look like a witch.

Then, just assemble the witch. I used a black olive cut in half for the eyes, a slice of avocado for the nose, and a strip of red bell pepper for the mouth. Carrot sticks were arranged on both sides for the hair and blue corn tortilla chips were placed on top in the shape of a witch's hat. There you have it, Halloween Witch Chips and Guacamole!

What else can I use for the witch?

Get creative! Just about any veggies could be used to assemble the witch. Green bell pepper strips could be used for the hair or mouth. Would you like a witch with curly hair? Why not try broccoli on the side or zucchini noodles?

Ingredients

For Guacamole

  • 5 medium ripe avocados seeds removed and scooped from peel
  • 1 garlic clove minced
  • 2 roma tomatoes seeded and diced
  • ¼ cup onion finely diced
  • ½ cup lime juice
  • 2 tablespoons fresh cilantro minced
  • ½ jalapeno seeds and membrane removed, finely diced (optional)

To Make Witch

  • 8 ounces Blue corn tortilla chips for the hat
  • 1 black olive cut in half through the middle (for the eyes)
  • 1 slice avocado for the nose
  • 1 slice red bell pepper for the mouth
  • Carrot sticks for the hair

Instructions

For Guacamole:

  • Smash avocado in a large bowl with a potato masher, fork, or pastry blender.
  • Place remainder of ingredients into the bowl and stir until well combined.
  • It is best served immediately. ***However, if you make it ahead of time, spread a thin layer of lime juice over the top to prevent avocado from turning brown. Then, press plastic wrap firmly over top and refrigerate until ready to serve. When ready to serve, stir the guacamole again until lime juice is well combined.

To Make Witch:

  • Place the guacamole in the shape of a face in the center of a large plate.
  • Cut 1 black olive in half and use for eyes.
  • Place a slice of avocado in center for nose.
  • Place 1 thin strip of red bell pepper under nose for the mouth
  • Add carrot sticks on each side for witch's hair
  • Then, arrange blue corn tortilla chips on top in the shape of a hat.
