Grilled Shrimp and Pepper Kabobs

Spring has finally arrived here in Maine! I am so happy that the weather is warming up. It means we can start grilling our favorite foods outside more often like these Grilled Shrimp and Pepper Kabobs.

What do I need to make the Grilled Shrimp and Pepper Kabobs?
This recipe is so simple to make and there are just a few ingredients that you will need:
- McCormick Grill Mates® Garlic, Herb and Wine Marinade Mix
- Olive Oil
- Balsamic Vinegar
- Shrimp
- Red Bell Pepper
- Orange Bell Pepper
- Yellow Bell Pepper
- Red Onion
How do I make the Shrimp Kabobs?
There are just a few simple steps to make this tasty recipe!
Step 1: First make the marinade. All you will need for this step is one package of McCormick Grill Mates Garlic Herb and Wine Marinade Mix, ¼ cup of olive oil, 1 tablespoon of balsamic vinegar and ¼ cup of water. In a small bowl, whisk these ingredients together until well combined and set aside. *Reserve 2 tablespoons of the marinade for basting the shrimp kabobs.

Step 2: Peel and devein 2 pounds of large shrimp, then rinse the shrimp and pat dry with paper towels. Place the shrimp in a large plastic bag and pour the garlic herb and wine marinade over the shrimp. Place the shrimp in the refrigerator and marinate for 30 minutes. 
Step 3: While the shrimp are marinating, chop up the bell peppers and onions into ¾ pieces.

Step 4: Time to make the kabobs! Thread one shrimp, 1 piece of chopped bell pepper, 2 pieces of red onion, then 1 more piece of chopped bell pepper onto a skewer. Continue to repeat in this order until skewer is full. I like to make them colorful, so I alternate bell pepper colors, but that is just preference.

Step 5: Warm up grill to medium high heat (around 400 degrees). Place shrimp on the grill and cook for about 3-5 minutes per side or until shrimp turn pink, and vegetables are tender-crisp, turning occasionally. Baste with reserved marinade halfway through cooking.
Step 6: Remove from heat and enjoy! I like to serve the kabobs over a bed of white rice or on top of pasta. However, they make a flavorful meal all by themselves!
