Last week my kids asked me to make some Tik Tok Pancakes Cereal. I have to admit that I had no idea what they were talking about. I have not spent much time on Tik Tok and I have clearly been missing out! So, I did some research and found dozens of videos on how to make this fun new breakfast treat!

Of course, when I decided to give it a go, I wanted to make them with a healthy spin. I came up with this quick and easy to make Gluten-Free Dairy-Free Pancakes Cereal Recipe. This cute and tasty breakfast takes just 20 minutes to make and the entire family loves it.

What do I need to make the Gluten-Free Dairy-Free Pancakes Cereal?

How do I make the Gluten-Free Dairy-Free Pancakes Cereal?

There are just a few simple steps to make this kid friendly pancake recipe.

Step 1: Prepare the Wet Ingredients:

In a medium bowl, mix the almond milk with the apple cider. Let it sit for 5 minutes to allow the milk to curdle. After the plant-based milk has curdled, add in the agave nectar, sunflower oil and vanilla and mix well with a spoon or whisk.

Step 2: Prepare the Dry Ingredients

In a large bowl, add the gluten-free flour, baking powder and a pinch of salt. Use a whisk to combine the ingredients together.

Step 3: Put it all Together

Add wet ingredients to the dry ingredients and mix until well incorporated. Be careful not to over mix. Then, let the pancake batter stand for 5 minutes. After 5 minutes has elapsed, add the batter to a squeeze bottle or plastic bag. If using a plastic bag, cut a small corner off to create a hole.

Step 4: Cook the Vegan Pancakes

The last step is cooking up these mini pancakes. Start off by heating a frying pan over medium heat. Once the pan is hot, remove from heat. Then, squeeze batter into the frying pan to form small circles taking care to leave space between them. 

*Pro Tip: These mini pancakes cook very fast! This is why the pan is removed from heat, while adding the batter.

Cook until golden brown and flip over to other side. Cook until golden on other side, then remove to a plate. Continue the process until all batter is used up. 

*Pro Tip #2: These tiny pancakes can be tricky to flip over, so try using a wooden skewer to make it easier to turn them.

That is all there is to it! Serve these yummy vegan pancakes up with your favorite toppings and enjoy!

How do I serve the Mini Pancakes Cereal?

They can served just like cereal in a bowl with milk or however you prefer. My son likes to eat them out of a bowl with maple syrup poured on top. My daughter enjoys them in a bowl with milk and fresh fruit slices. I like to eat the little pancakes with cocoa nibs sprinkled on top.

Can I store the Gluten-Free Dairy-Free Pancakes Cereal?

Yes, they can be stored in a covered container in the refrigerator for 3 days, then reheated for just a few seconds in the microwave. They can also be stored in a plastic bag in the freezer for up to month.

Ingredients

Wet Ingredients

  • 1 ½ cups almond milk or any plant-based milk
  • 1 tablespoon apple cider vinegar
  • 3 tablespoons agave nectar or honey
  • 3 tablespoons sunflower oil or vegetable oil
  • 1 teaspoon vanilla

Dry Ingredients

Instructions

  • In a medium bowl, mix almond milk with apple cider. Let is sit for 5 minutes to curdle.
  • After 5 minutes, add the rest of wet ingredients: agave nectar, sunflower oil and vanilla. Mix well with a spoon or whisk.
  • In a large bowl, add all dry ingredients: gluten-free flower, baking powder and salt. Combine well with a whisk.
  • Pour wet ingredients on dry ingredients. Mix until well incorporated. Don't over mix. Let pancake batter stand for 5 minutes.
  • Transfer the batter to a plastic bag and cut the edge to create a hole.
  • Heat a non-stick pan. Once hot, switch off the heat and squeeze batter into small circles. Make sure to leave space between circles, as the pancakes will expand.
  • Switch on heat again and cook pancakes. Once light and golden brown, flip over and cook other side. I use a wooden skewer to flip them. Repeat same process until no batter is left.
  • Serve in bowls with your favorite toppings. You can also enjoy with milk like cereals.

Notes

*These mini pancakes cook so fast that they will burn while you are still filling the pan with circles. That's why I heat the pan then switch off to have time to fill the pan then I switch the heat on again.
