I always keep our refrigerator stocked with plenty of fresh fruit.  The other day I realized that we had quite an abundance of it. Initially I was going to make a fruit salad, but when I saw the pack of tortillas in the fridge, I came up with a new plan: Fruit Salsa and Cinnamon Chips.

After making Peach Salsa and Watermelon Salsa last month, I was inspired! So, I diced up a bunch of fruit in a bowl and added in some juice. Then, quickly made the cinnamon chips. It was so quick and easy to make and the fruit salsa and cinnamon chip recipe was a huge hit with the kids!

What do I need to make the Fruit Salsa and Cinnamon Chips?

You will need 11 ingredients to make this fresh and delicious fruit appetizer. Here is what you will need:

For Fruit Salsa: 

  • Strawberries
  • Kiwi
  • Raspberries
  • Blackberries
  • Green Apple
  • Raspberry Jam
  • Orange 

For Cinnamon Chips:

How do I make the Fruit Salsa?

This is so incredibly easy to make in just 2 simple steps.

Step 1: Prepare the Fruit

All you need to do is dice up the strawberries, kiwi and green apple and place them in a bowl. Add in the fresh raspberries, blueberries and blackberries.  If the blackberries are large, slice them in half first.

Step 2:  Add Juice, Jam and Stir!

After all the fruit is added to the bowl, add in the juice of one orange taking care to omit any seeds. Then add in raspberry jam and stir. If you would like it to be a little less sweet, puree some fresh raspberries and add those to bowl instead of the jam. Cover and place the fruit salsa in the refrigerator for at least 30 minutes to allow flavors to develop.

How do I make the Cinnamon Chips?

These cinnamon chips are so delicious! It is hard to believe that they take less than 15 minutes to make.

Step 1: Prepare the Tortillas

First, preheat the oven 350 degrees and prepare a baking sheet with cooking spray. Then, place tortillas on a cutting board and use a pizza cutter to cut into triangles. Each tortilla should be cut into 6 triangular slices. The tortillas can be stacked and you can cut 2 or 3 at at a time.

Step 2: Add Butter Mixture, Bake and Enjoy!

With a basting brush,  spread butter, cinnamon and sugar mixture onto the tortilla triangles. Place them on a baking sheet and place them in the oven on the center rack. Bake at 350 degrees for 10 to 12 minutes or until tortillas start to lightly brown. Remove from oven and enjoy Cinnamon Chips with Fruit Salsa.

Can I store the Fruit Salsa and Cinnamon Chips?

Yes, the fruit salsa can stored in a covered container in the refrigerator for up to 3 days. The tortillas can be stored in ziplock bag or covered container at room temperature for up to 3 days.

Are there any variations to the Fruit Salsa?

Absolutely! This is a simple recipe that can be changed up I a variety of different ways. Here are a few simple ideas.

  • Different Fruit: I used the fruit that I had on hand in my refrigerator when I made this. I think just about any other fruit would tase delicious in it though. Sliced grapes, halved cherries and diced mango are just a few ideas The only one I would avoid is banana because it browns so quickly and may be come to mushy in the salsa.
  • Juice: I used the juice of an orange, but lime or lemon juice would taste good as well. You could even use apple juice or cranberry juice in this recipe.
  • Sweetener: I used sugar in the butter and cinnamon combo. However, you could use the sweetener of your choice like maple syrup, honey of agave nectar.

Could I use something else for dipping in the fruit salsa?

Yes, of course! The cinnamon chips are a quick and easy item to make to go with it. However, if you do not have time or are out of tortillas, here are a few suggestions to try:

  • Pretzels
  • Crackers
  • Pita Chips
  • Add the fruit salsa on top of Greek Yogurt

Ingredients

For Fruit Salsa:

  • 1 cup strawberries diced
  • 1 cup kiwis diced
  • 1 cup raspberries
  • ½ cup blackberries
  • 1 green apple diced
  • 2 tablespoons raspberry jam or pureed raspberries

  • 10 round tortillas
  • ¼ cup butter melted
  • 1 teaspoon cinnamon

Instructions

  • Chop all fruit and place in a large mixing bowl.
  • Mix in the rspberry jam (or pureed raspberries) and juice of 1 orange. Refrigerate for at least 30 minutes to allow flavors to develop.
  • While, salsa is in refrigerator, prepare cinnamon chips.

For Cinnamon Chips:

  • Preheat oven to 350 degrees and prepare baking sheet with cooking spray.
  • Cut tortillas into triangles, and place on baking sheet.
  • Melt butter and add in cinnamon and sugar.
  • Brush butter mixture on tortillas and place into oven for 10-12 minutes, until just slightly brown
  • Let cool and enjoy with fresh fruit salsa.
