Easy Peach Ricotta Toast

Toast is an old standby for breakfast for many people because it is so easy to make. However, plain old toast with butter can get boring! So, why not class up your breakfast bread in just a few minutes by adding fruit and cheese. This Peach Ricotta Toast is so simple to make, but tastes like a decadent brunch treat. Since the recipe takes just five minutes to make, you can enjoy it even on your busiest mornings!

As I mentioned, this simple breakfast idea takes just five minutes to make in two easy steps. Here is what you will need to do to make this toast with cheese and fruit.

Step 1: Toast the bread

Toast bread until it is lightly browned. I used a hearty, multi-grain farmhouse bread for my toast. However, you can use white or wheat bread, just make sure it is not sliced too thinly. I would not recommend using a rye or pumpernickel bread to make the fruit toast as it will overpower the flavor of the peaches and ricotta cheese.

Step 2: Add toppings to the toasted bread

Cut one peach into thin slices and place neatly on top of toast. Then, sprinkle a tablespoon of granola on top of the fruit bread. Chopped nuts can also be used instead of the granola if you prefer. Lastly, drizzle honey over peaches and granola and enjoy immediately!

Substitutions for Peach Ricotta Toast

This is really more of a "breakfast idea" then recipe! So, really any combination of fruit and cheese or butter that you enjoy together work great. Here are a few of my favorite combinations to try:

  • Classic Almond Butter and Bananas: I make my own Homemade Healthy Almond Butter and spread it over toasted whole wheat bread, than top it with sliced bananas, a sprinkle of granola and a drizzle of honey.
  • Wild Berries and Cream Cheese: In this version, I take a hearty toasted white bread and spread cream cheese on top. Then, I arrange blackberries, raspberries and blueberries on top. Sometimes, I add a teaspoon of sugar on top of the berries for extra sweetness. 
  • Strawberries and Brie: While this combo may sound odd, the strawberries and brie actually go fabulously together! Toast a slice of multigrain bread, then add brie on top with sliced strawberries.
