Easy One Pot Dinner Ideas

One pot meals like my Easy Stuffed Bell Pepper Soup recipe or Sweet Potato Shepherd's Pie are absolutely fabulous and perfect recipes to cook while being stuck at home. They are typically quick and easy to make so they are also great when you are short on time. I love them because there are less dishes to wash afterward! These five easy one pot dinner ideas are some of my favorites because the entire family enjoys them.

These easy one pot dinner ideas are all very versatile. They are simple ideas that can be made in a hurry. There are no précise  measurements, just simple ideas to get you started. So get creative and cook one of these tasty dishes up tonight!

One Pot Cheeseburger Pasta

One Pot Homemade Hamburger Cheeseburger Macaroni Pasta Skillet

Packing in all the flavors of a cheeseburger in an easy to cook pasta, this one's a must try. Start by heating some oil in a pot, and then add ground beef and chopped onions into it. Sauté until beef is browned and onions have softened.  Season with salt and pepper to taste.  Next, add in some finely chopped tomatoes, tomato sauce, chicken broth, mustard and rigatoni or elbow macaroni pasta. Allow it to cook on low until the pasta is just done. Remove from heat and top with a generous helping of grated cheese. That's it! 

Easy Spicy Chicken Pilaf

Probably the easiest recipe of them all, all you need to do with this one is sauté some chopped onions, garlic, green beans and mushrooms in a large pot with some oil. Next, add in some kidney bean and chicken stock and cook for 10 minutes. Then, add rice and chicken (cubed) and cook until the rice is done. 

One Pot Sausage Pasta

Smokey and delicious, this sausage pasta is worth a shot. Heat some olive oil in a large skillet and add in some chopped garlic onions and mushrooms.  Sauté until onions have softened and mushrooms have released moisture. Then, add in ground sausage and cook until sausage starts to brown. Add some chicken stock, tomatoes, and pasta and cook until the pasta is done. When pasta is done cooking, add in milk and salt and pepper to desired taste. Remove from heat and top it with lots of cheese and some chopped parsley! 

Quick Teriyaki Veggies & Rice

Got some fresh veggies waiting to be put to use? This flavorful recipe is just the perfect way to do that. Start by stir frying some veggies (broccoli, carrots, onions, green beans, cabbage etc) in a large pot with some oil on high heat. Now add some soy sauce, salt, pepper, chopped garlic, chopped ginger, honey and a cup of chicken (or veg) stock and bring it upto a boil. Prepare a cornflour and water slurry and add it to this pot and stir continuously until the mixture thickens. Now add some soaked rice and water and cook on medium heat until just done!

Homemade Chili Mac and Cheese with Cilantro

Time to combine two classic comfort foods together in a simple recipe! To make this, combine some chopped onions, garlic and ground beef in a pot with some olive oil and cook until beef has browned and onions soften. Next, add some kidney beans, chicken stock, salt, pepper, cumin powder, tomatoes and chili powder. Bring to a boil, then add elbow macaroni to the pot. Cook until pasta is done. Remove from heat and stir in shredded cheese. Sprinkle with parsley, if desired before serving.
