Gluten Free Blueberry Cinnamon Streusel Muffins
Happy Sunday! I hope you are enjoying a wonderful & relaxing day. We have had a bit of a lazy weekend, sleeping in late and staying in our pjs until noon. My daughter wanted to bake yesterday, so had fun whipping up a batch of these Gluten Free Blueberry Cinnamon Streusel Muffins. Then, we had a little party, I sure love days like these!

Here is what you will need:
Streusel:
-¼ Cup of Chopped Pecans
-¼ Cup of Coconut Sugar
-2 tablespoon of Brown Rice Flour
-2 tablespoon of Butter
-½ teaspoon of Cinnamon

Muffins:
-Muffin Liners
-¾ Cup of Brown Rice Flour
-¾ Cup of Potato Starch
-½ Cup of Tapioca Flour
-½ Cup of Granulated Sugar
-¼ Cup of Coconut Sugar
-1 tablespoon of Baking Powder
-½ teaspoon of Cinnamon
-1 ½ teaspoon of Xantham Gum
-1 teaspoon of Salt
-1 Cup of Fresh Blueberries
-¼ Cup of Chopped Pecans
-⅓ Cup of Melted Butter
-2 Eggs
-1 teaspoon of Vanilla
-1 Cup of Vanilla Almond Milk

To Make:
1. Preheat Oven to 400 Degrees.
2. For Streusel, Combine Pecans, Coconut Sugar, Brown Rice Flour, Cinnamon, & Butter in a small bowl. Mix and mash until the mixture is crumbly, then set aside.
3. In a Large Bowl, Combine Brown Rice Flour through Salt. Stir with a whisk until well combined.
4. Add in Pecans & Blueberries, Stir gently.
5. In Separate Bowl, whisk together Butter, Vanilla, Eggs, & Almond Milk.
6. Add Milk Mixture to Flour Mixture & stir until well combined.
7. Place Muffin Cup Liners in Muffin Pan, then spoon batter into Cups. I had enough to make 15 muffins.
8. Sprinkle Streusel topping on each muffin.
9. Place in Oven and Bake at 400 Degrees for 20 Minutes, or until tops of muffins begin to slightly brown.
10. Let cool in pan for 5 minutes, then remove & Enjoy!!

Those muffins do look really good. I've never baked with those variety of gluten free flour . I'd be interested in seeing how they taste!
