How do I make Air Fryer Eggplant Fries?

This eggplant French fry recipe is incredibly easy to make. There are just two steps needed to make it!

Step 1: Prepare the eggplant

Start off by trimming the ends of the eggplants. Then, cut them into 1 inch thick wedges.  Prepare the dredging mixture by combining flour and Ranch Seasoning.

Next, set up the dredging station by placing half of the flour mixture on one plate and the other half on another plate. Beat the eggs, then place them in a shallow bowl. Dredge the eggplant in the flour on one plate, followed by the egg wash. Then, dredge eggplant wedges again in the flour on the second plate.

PRO TIP: Make sure to cover the entire wedge with egg. On any areas that are not covered, use your fingers to blot egg on where it is not sticking.

Step 2: Air Fry the Eggplant

Lay the eggplant wedges in the air fryer basket and spray wedges with olive oil. Air fry at 380 degree Fahrenheit for 10 minutes. Shake the basket and respray wedges with olive oil half way through cooking process. Remove from air fryer basket, cool for 5 minutes. Then, serve with your favorite dipping sauce!
