  • Combine the flour and ranch seasoning into a bowl and whisk.
  • Set up your dredging stations with half of the flour mixture on one plate and half on the other.
  • Start by dredging your eggplant in the flour, followed by the egg wash, lastly in the other flour mixture. Tip: Be sure to cover the entire wedge with egg and use your fingers to blot where the egg may not stick on it’s own.
  • Lay in an air fryer basket and spray wedges with olive oil.
  • Bake at 380F for 10 minutes, shaking and respraying half way through.
  • Serve with favorite dipping sauce.
