Step 1: Prepare coating
In a shallow dish, combine the flour, cornstarch and spices. In another shallow dish, whisk the eggs together. In a third shallow dish, add the panko.

Coat the chicken thighs in flour mixture, then wash with the egg, and finally, coat with the panko crumbs.
