Air Fryer Blueberry Hand Pies

These Air Fryer Blueberry Hand Pies are a surefire way to satisfy your sweet tooth! There's nothing better than a good homemade dessert and blueberry pie is a classic. It is a sweet combination of flavors and textures that everyone loves. As with most pies, this one has a crust at the bottom and a filling in the middle. The blueberries add an interesting texture to it as well. This recipe is super easy to make in less than 20 minutes with just five ingredients.

These hand pies are one of my favorite go-to desserts when I don't have time to bake anything from scratch. They can also be made with other fruits like strawberries, raspberries, or blackberries, but the blueberry flavor is by far my favorite! One of the reasons these pies are so easy to make is because you use your air fryer to lightly fry the dough before adding the filling. What ingredients do I need to make the Air Fryer Blueberry Hand Pies?
There are so many things I love about this dessert, but my favorite thing is how simple it is to make. In fact, there are just 5 ingredients in it. Here is what you will need to make this air fryer dessert recipe:
- Refrigerated pie crust dough, thawed
- Blueberry pie filling
- Egg white (optional)
- Granulated sugar
- Cooking spray

How do I make the Homemade Blueberry Hand Pies?
Step 1: Prepare the pie dough
Spray the air fryer tray with cooking spray. Whisk together the egg white and water in a small bowl and set aside. Unroll the thawed pie crust dough. Use a rolling pin to roll out the dough slightly. Take a circle cookie cutter or biscuit cutter to create palm size circles. Save any excess dough to roll back out and create more circles.

Step 2: Make the hand pies
To make the pies, lay one dough circle on a flat surface and place just under a tablespoon of filling in the center. Place another pie circle on top to sandwich the filling. Then, use a fork to seal the edges of the dough. Prick the middle of the hand pie a couple times with the fork to allow steam to release while cooking. Repeat with remaining dough circles.

Step 3: Air fry the blueberry hand pies
Lightly brush the tops of the hand pies with the egg white mixture (or spray lightly with cooking spray) and sprinkle with sugar. Place several in your air fryer basket making sure to leave space between them to allow the air to flow. They may need to be cooked in batches depending on the size of your air fryer. Cook on the air fry setting at 350 degrees Fahrenheit for 6 to 8 minutes, or until the hand pies are cooked through with a golden brown crust.
Note: Air fryer cook times may vary depending on the brand and air fryer size.
Step 4: Serve and enjoy!
Remove basket from air fryer. Then, transfer hand pies to baking rack. Allow to cool slightly, then serve and enjoy! These blueberry hand pies can be stored at room temperature in an airtight container for up to 2 days or in the refrigerator for up to 4-5 days.
