  • Medium russet potatoes
  • Pulled pork
  • Colby and Monterey Jack shredded cheese
  • Unsalted butter
  • BBQ sauce
  • Sour cream

How Do I Make a Pulled Pork Baked Potato?

Add tons of flavor to a plain baked potato with this quick and easy dinner idea! Simply follow these instructions to make a delicious baked potato topped with BBQ. I guarantee it will be a hit with everyone in the family!

Step One: Bake the Potatoes 

While you prep the potatoes for baking, preheat the oven to 450 degrees. Wash and dry the potatoes and use a fork to poke holes in the skin all around each one. Place the potatoes on a rack on top of baking sheet and brush each one with melted butter. Sprinkle salt and pepper over the top of each potato. Place the pan in the oven to bake for 30 minutes, then baste with more melted butter. Continue baking for another 25 minutes, until the inside of the potatoes is fork tender.

Step Two: Load the Potatoes

Cut the potatoes in half and lightly fluff the inside with a fork. Add melted butter to each potato and season with more salt and pepper. Stir to mix the butter and seasoning into the filling. Sprinkle each potato with half the shredded cheese, then place half the pulled pork on top. If you're in a hurry to prepare your BBQ potatoes, you can speed up the cooking process by preparing your baked potatoes in the microwave. 

There are two different ways you can use the microwave to cook your potatoes:

  • Cook the potatoes all the way through in the microwave. You can prepare your potatoes for eating completely in the microwave if you're looking for a fast way to get them ready for dinner. Start by poking a few holes in the potato with a fork, then place it on a microwave-safe plate. Cook for seven minutes, then check to make sure the potato is soft all the way through. If it's not fully tender, continue cooking in one-minute increments.
  • Soften the potato and finish cooking in the oven. If you want your potato to have crispy skin, it's a good idea to finish baking it in the oven. Poke a few holes in the potato and cook it on a microwave-safe plate for 7 minutes. Then, transfer it to a 450-degree oven and continue baking for 10 to 15 minutes, until the skin is crispy.

Instructions

  • Split the potatoes and lightly fluff the inside of each potato with a fork.
  • Immediately place more melted butter on the inside of the potatoes and sprinkle with a bit more salt and pepper.
  • Sprinkle each potato with half the shredded cheese.
  • Place half the pulled pork on each potato.
  • Drizzle with your favorite BBQ sauce.
  • Place the jalapenos on top and drizzle sour cream over the top of them.
  • Garnish with a bit of chopped chives and enjoy!

Notes

Tips:
I do not recommend these be stored after assembling. You can make the potatoes ahead of time and store them in an airtight container for up to 1 week, but keep all the ingredients separated until you’re ready to serve.
You can use your favorite method for baking the potatoes, it doesn’t have to be the oven. This is totally up to you.
The amount of sour cream, bbq sauce, jalapenos, and salt/pepper is totally up to your preferences. I just drizzle and sprinkle until my heart whispers “stop.”
You can use your favorite shredded cheese in place of the kind I used. I tend to use whatever I have on hand.
Be sure to use your favorite BBQ sauce for this recipe as it will have a strong flavor presence.
