How do I make Air Fryer Eggplant Fries?
This eggplant French fry recipe is incredibly easy to make. There are just two steps needed to make it!
Step 1: Prepare the eggplant
Start off by trimming the ends of the eggplants. Then, cut them into 1 inch thick wedges. Prepare the dredging mixture by combining flour and Ranch Seasoning.
Next, set up the dredging station by placing half of the flour mixture on one plate and the other half on another plate. Beat the eggs, then place them in a shallow bowl. Dredge the eggplant in the flour on one plate, followed by the egg wash. Then, dredge eggplant wedges again in the flour on the second plate.
PRO TIP: Make sure to cover the entire wedge with egg. On any areas that are not covered, use your fingers to blot egg on where it is not sticking.

- 2 small eggplants ends trimmed and cut into 1-inch thick wedges
- 2 eggs beaten
- 1 cup all-purpose flour
- ½ packet ranch seasoning
- olive oil cooking spray
Instructions
- Combine the flour and ranch seasoning into a bowl and whisk.
- Set up your dredging stations with half of the flour mixture on one plate and half on the other.
- Start by dredging your eggplant in the flour, followed by the egg wash, lastly in the other flour mixture. Tip: Be sure to cover the entire wedge with egg and use your fingers to blot where the egg may not stick on it’s own.
- Lay in an air fryer basket and spray wedges with olive oil.
- Bake at 380F for 10 minutes, shaking and respraying half way through.
- Serve with favorite dipping sauce.
