Ingredients

  • cups Corn Tortilla Chips or 1 bag
  • 1 16 ounce can Refried Bean
  • 1 cup Corn drained and rinsed
  • 1 cup Black Beans drained and rinsed
  • 2 Bell Peppers finely diced
  • ¼ cup Red Onion finely diced
  • 2 Roma Tomatoes diced
  • 1 5 ounce can Black Olives drained
  • 1 Jalapeño seeds removed and thinly sliced
  • 2 cups Shredded Mexican Blend Cheese

Instructions

  • Preheat the oven to 400 degrees.
  • Prepare baking sheet with cooking spray and set aside.
  • Prepare veggies by dicing bell peppers, red onion and tomatoes. Slice jalapeños and remove seeds.
  • Rinse and drain canned black beans and corn.
  • Spread tortilla chips on baking sheet.
  • Spoon dollops of refried beans on top of the tortilla chips.
  • Spread corn and black beans on top.
  • Sprinkle diced vegetables evenly over top.
  • Place sliced black olive and jalapeños on top of other veggies.
  • Add shredded cheese.
  • Place the sheet pan of nachos in the oven on the center rack. Bake at 400 degrees for about 10 minutes or until cheese is melted on top.
  • Remove from oven, allow to cool for 5 minutes and enjoy!

Notes

Serve with toppings of your choice!
