Corn Tortilla Chips

Refried Bean

drained and rinsed

Black Beans
drained and rinsed

Bell Peppers
finely diced

Roma Tomatoes

can Black Olives
drained

Jalapeño
seeds removed and thinly sliced

Shredded Mexican Blend Cheese
Instructions
Preheat the oven to 400 degrees.
Prepare baking sheet with cooking spray and set aside.
Prepare veggies by dicing bell peppers, red onion and tomatoes. Slice jalapeños and remove seeds.
Rinse and drain canned black beans and corn.
Spread tortilla chips on baking sheet.
Spoon dollops of refried beans on top of the tortilla chips.
Spread corn and black beans on top.
Sprinkle diced vegetables evenly over top.
Place sliced black olive and jalapeños on top of other veggies.
Add shredded cheese.
Place the sheet pan of nachos in the oven on the center rack. Bake at 400 degrees for about 10 minutes or until cheese is melted on top.
Remove from oven, allow to cool for 5 minutes and enjoy!
