Sweet Potato Casserole with Praline Topping

This sweet potato casserole with a praline topping is delicious during the fall season and for holidays. The nuts are a great crunchy bite and using pralines makes for a lighter recipe than those that call for marshmallow toppings!

Ingredients

  • 5 large Sweet Potatoes peeled and cut into large chunks
  • 1 Cup Flour
  • ¾ Cup Brown Sugar packed
  • ½ Cup Pecans toasted and coarsely chopped
  • ½ Cup Butter softened and cut into small pieces
  • 1 teaspoon Cinnamon
  • ½ Cup Granulate Sugar
  • 1 Egg
  • 2 teaspoon Vanilla Extract
  • 5 oz. Can Evaporated Milk

Instructions

  • Preheat oven to 350 degrees.
  • Place sweet potatoes in a pot and cover with water, bring water to a boil, then simmer for approximately 20 minutes, or until tender.
  • Drain sweet potatoes, then place in a large bowl and mash them.
  • Prepare the Praline Topping. Combine flour, brown sugar, pecans, butter and cinnamon in a small bowl. Stir until well combined
  • Mix 1 cup of praline topping mixture into mashed sweet potatoes.
  • Next, stir in sugar, vanilla, egg and evaporated milk.
  • Place sweet potato mixture in an 8x8 baking dish coated with cooking spray or butter.
  • Top with the remaining praline topping and bake at 350 Degrees for approximately 45 minutes or until topping begins to lightly brown.
  • Remove from oven and cool on wire rack for 10 minutes before serving.
