Parmesan Crusted Salmon in the Air Fryer

But the best party about this recipe for parmesan crusted salmon is that it can be prepared in your air fryer to help speed up the cooking process.

Ingredients

For the Salmon:

  • 4-3 oz salmon fillets
  • 2 tablespoons garlic minced
  • cup Parmesan cheese finely grated
  • cup panko crumbs
  • 1 tablespoon finely chopped chives
  • 1 tablespoon finely chopped cilantro
  • 1 lemon for zest
  • 2 teaspoons olive oil
  • 3 tablespoons butter melted
  • 1 tablespoon Dijon mustard
  • Kosher salt and freshly ground black pepper

For the Wine Sauce:

  • 2 tablespoons butter
  • 1 tablespoon garlic minced
  • 1 cup rose wine or white wine
  • 1 cup heavy cream
  • 1 teaspoon chives finely chopped
  • 1 teaspoon cilantro finely chopped

Instructions

Step One: Prepare the Breading

  • In a shallow bowl, stir together the parmesan cheese, panko breadcrumbs, chives and lemon zest. After that, add the olive oil and set the bowl aside.

Step Two: Season the Salmon

  • Sprinkle the salmon with salt and pepper. Then, stir together the melted butter, Dijon mustard, and minced garlic in a small bowl. Brush each fillet with the butter mixture, generously coating each piece of fish.

Step Three: Dredge the Fillets

  • Once the salmon is coated in butter, lightly press the tops and sides of each fillet into the breadcrumb mixture.

Step Four: Air Fry the Salmon

  • Preheat the air fryer to 350 degrees and line the basket with a piece of parchment paper to prevent the salmon from sticking. Place the salmon in the basket and coat each piece with nonstick cooking spray. Cook the fish for 10 minutes, until the crust is golden brown.

Step Five: Make the White Wine Sauce

  • Pour the wine, garlic, chives, cilantro and butter into a medium saucepan. Heat the sauce ingredients over medium heat and allow the sauce to simmer until it’s reduced. Once the sauce has thickened slightly, add the cream and continue cooking for an additional three minutes. Serve salmon topped with the white wine sauce.
