These Oven Roasted Mushrooms are so delicious and easy to make. White mushrooms, onions and garlic combined with butter, balsamic vinegar and oregano are a simple side dish. The Oven Roasted Mushrooms added to pasta or rice also make a delicious vegetarian main dish.
Spray a baking sheet with cooking spray. Set aside.
In a large bowl, mix together the melted butter, olive oil, balsamic vinegar, garlic, oregano, salt and pepper.
Add the mushrooms and diced onions. Toss to coat.
Lay the mushrooms out on the prepared baking sheet in a single layer.
Roast for 20 minutes, until mushrooms are tender.
Sprinkle with chopped fresh parsley and serve while hot.
Notes
*I clean my mushrooms by wiping them with a damp paper towel. You could also use a specialized mushroom brush to wipe away any dirt. If you would like, you can quickly rinse the mushrooms under cold water but don’t leave them to soak and be sure to pat them dry. Wet mushrooms won’t brown very well.*You can use brown mushrooms instead of white ones but regardless of the type you use try to get ones that are similar in size so that they cook evenly.*You can store these roasted mushrooms in a sealed container in the refrigerator for a couple of days but I find that they have the best flavor and texture when they are fresh from the oven.
