No Bake Lavender Cheesecake

  • Prepare the Crust
  • Place the graham crackers in the bowl of your food processor and pulse the blades until the crackers are crushed into fine crumbs.
  • Combine the crushed graham crackers with the butter and stir to mix.
  • Press the crust mixture into the bottom of an 8-inch springform pan in an even layer and place the pan in the refrigerator to chill for around 30 minutes. (Note: This can be made in a 9-inch pie plate if you do not have a springform pan).
  • Make the Filling
  • Add the cream cheese, whipped cream, and sugar to a large bowl. Use an electric mixer to blend the filling ingredients until smooth.
  • Add the lavender syrup and a few drops of purple food coloring and beat for two more minutes.
  • Chill the Cheesecake
  • Remove the crust from the refrigerator and pour the cheesecake filling evenly over the top. Cover the pan and return the cheesecake to the fridge to chill for 2 to 3 hours. Decorate with dried lavender and whipped cream before serving.
