Bieler Broth (Green Detox Soup)

Ingredients

  • ½ bunch fresh herbs such as basil parsley, cilantro, or dill ( I used basil)
  • 1 lb green beans
  • 2 stalks celery
  • 3 small zucchini
  • 4 cups vegetable broth

Instructions

  • Snap the ends off the green beans.
  • Coarsely chop the celery and zucchini.
  • Add the veggies and herbs to a large stock pot and pour the vegetable broth in.
  • Bring to a boil and reduce to a simmer.
  • Cover and simmer for 15 minutes or until the vegetables are tender.
  • Puree the soup in the pot using an immersion blender or in a blender in batches.

Notes

Serving suggestions: Serve with a swirl of heavy cream or butter for added fat and flavor. Top with crushed red pepper or fresh herbs.
