Almond Crusted Chicken in the Air Fryer

  • 1 cup almonds
  • ½ cup corn-starch
  • Natures Seasoning
  • 2 large eggs beaten
  • 2 chicken breasts fat trimmed (butterfly your breasts by cutting them in half width-wise to make 4 thinner breasts)

Instructions

Step One: Process the Almonds

  • Start by placing the nuts in your food processor. Pulse the processor until the nuts are finely chopped, making sure not to overprocess the almonds.

Step Two: Prepare the Breading Ingredients

  • Gather three shallow bowls to hold the ingredients for the breading. In one bowl, combine the cornstarch with the natural seasoning. Add the ground almonds to a second bowl. And in the third bowl, add the beaten eggs.

Step Three: Coat the Chicken Breasts

  • Dip each chicken breast in the cornstarch mixture until both sides are fully coated. Then, dip the chicken in the eggs to cover both sides. After that, transfer the chicken to the almonds and press the nuts into both sides of the chicken.

Step Four: Air Fry the Chicken

  • Preheat the air fryer to 385 degrees for around five minutes. When the air fryer is hot, place the chicken breasts inside the air fryer basket and coat each piece with nonstick cooking spray. Cook the chicken for 12 minutes, until the crust is golden brown and the internal temperature reaches 165 degrees.
