Making this simple side dish couldn’t be easier! That’s because there are just three steps to preparing this recipe. To make your own corn salad, follow these easy instructions:

Step One: Grill the Corn

Before you can mix up your corn salad, you’ll need to cook the corn. Start by brushing each ear of corn with butter and seasoning the corn with salt and pepper. Place the seasoned corn on a hot grill and cook for 10 to 15 minutes, rotating the ears of corn every few minutes to cook each side evenly. When the corn is cooked through, remove it from the grill and set it aside to cool.

Step Two: Prepare the Dressing

To make the dressing for your Mexican corn salad, stir together the mayonnaise, lime juice, chipotle sauce, paprika, and chili powder. Continue stirring until all the ingredients are well blended, then set the dressing aside while you put the salad together.

When the corn has cooled, use a sharp knife to slice the kernels off each ear of corn. Add the corn to a large bowl, along with the onion, cilantro, radish, avocado, and cheese. What is the Best Way to Shuck Corn?

Using fresh ears of corn is the best way to make this quick salad recipe. But figuring out how to shuck your corn without making a mess, isn’t always easy. With the help of these tips, you’ll be able to shuck all your corn ears in a flash.

  • Remove the outer leaves. Take off all the outer leaves from the corn until only one layer remains around the cob.
  • Peel back the top. Expose the tip of the earn of corn by peeling back the top of the leaves. Leave around on inch exposed on the top of the ear.
  • Pull down the leaves. Hold the top of the leaves and the tassel in your hand and pull down hard while holding the bottom of the ear in your opposite hand. Pull the leaves all the way down to the bottom of the ear, inverting the leaves.
  • Break off the leaves. Break the leaves off the bottom of the ear by pulling the end of the stem to the side with your hand. Discard the leaves.
  • Rinse the corn. Run the ear of corn under water to clean the corn and remove any remaining tassels that are stuck to the kernels.

Making this salad is so simple because you can easily adjust the recipe to suit your own tastes. Try these recipe substitutions when making your own corn salad to make it perfect for your family.

  • Replace the mayonnaise. If you’re not a fan of mayonnaise, there are a couple different ingredients you can use to replace it in the dressing for your corn salad. Try using sour cream or Greek yogurt in place of the mayonnaise when preparing the salad dressing.
  • Try a different cheese. Finding cotija cheese isn’t always easy, depending on where you live. If you can’t find this crumbled Mexican cheese, you can swap it out for any white cheese. Parmesan, mozzarella, and Panela are all great options.
  • Add more chipotle. It’s easy to add some spice to your corn salad with the help of chipotle sauce. To take the flavor of your salad up a notch, simply add more chipotle to the dressing. And to give the salad a milder flavor, reduce the amount of chipotle in the dressing.
  • Mix in some peppers. Are you hoping to add even more spice to your corn salad? In addition to increasing the amount of chipotle sauce in the dressing, you can also mix some fresh jalapeno peppers into the salad itself.
