Instant Pot Fried Rice with Vegetables

Enjoy a taste of your favorite Chinese takeout dish in the comfort of your own home! This Instant Pot Fried Rice recipe is super easy to make with just a few simple ingredients. Long grain rice, frozen vegetables, eggs, onion, sesame oil and soy sauce are a tasty combination of ingredients for this vegetarian instant pot recipe.

What do I need to make the Vegetarian Fried Rice?
This fried rice recipe comes together with just eight ingredients. Here is what you will need:
- Long Grain Rice: I am partial to Mahatma long grain rice, but you can use any brand that you have on hand!
- Frozen Vegetables: This is a great recipe to use up any frozen veggies you have in the freezer. I used a blend of carrots, corn, peas and green beans. However, any combination that you enjoy will work fine! Broccoli, snow peas and red bell pepper are also great additions.
- Eggs: The eggs add flavor and texture. It is so easy to just add them to instant pot and cook them along side the other ingredients.
- Red Onion: I used chopped red onion because I love the flavor of this variety of onion. However, white onion or yellow onion will also work!
- Sesame Oil: I really enjoy the nutty taste and aroma that the sesame oil adds to the Instant Pot Fried Rice. I also like to use because it is high in anti-oxidants and it has strong anti-inflammatory properties. My favorite brand is Imperial Dragon because of the quality and flavor.
- Soy Sauce: The soy sauce, made from fermented paste of soy beans is a staple in Chinese cooking. I add it into the fried rice while cooking it, but it can also be used as a condiment on top!
- Sesame Seeds: I use a sprinkle of sesame seeds as a garnish on top.
- Sriracha Sauce: The sriracha sauce will add some heat and extra flavor; however, it is completely optional! So, if you are not a fan of hot and spicy, leave it out.

- Instant Pot: I was totally late to the party with the Instant Pot. In fact, I bought mine at a Black Friday special and then let it sit for over year before using it. BIG MISTAKE! The Pressure Cooker has been a game changer for cooking. No longer do I have to plan out days when I will be home for hours to babysit a meal in the slow cooker or braising in the oven. Pressure cooking, in my humble opinion delivers the same ( and often times better results) than slow cooking all day!

How do I make the Instant Pot Fried Rice with Vegetables?
I love this easy Instant Pot recipe because everything is prepared in just a few simple steps right in the Instant Pot itself. Here is what you will need to do to make the rice.
Step 1: Prepare the Rice
Place rice and water in your Instant Pot. Stir so the rice doesn't stick to the bottom. Close the lid, seal the pressure valve and cook on high for 3 minutes. Once cooking time is complete, let pressure release naturally for 10 minutes. Then quick release the remaining pressure.

Step 2: Cook the Vegetables
Remove the rice from the pot and place in a separate bowl. Without cleaning the bowl, turn on the Saute function of the Instant Pot. Saute the chopped onion, with sesame oil. Once the onion is tender, add the frozen vegetables and continue to cook until vegetables are heated.
Step 3: Cook the Eggs
Push the vegetables over to one side of the pot and add 3 eggs. Scramble the eggs right in the pot. Once the eggs are cooked, stir them together with the vegetables. Turn off the Instant Pot.

Step 4: Add the Fried Rice back to the pot, serve and enjoy!
Add the cooked rice back to the pot and stir well. Stir in the soy sauce. Then, place in your favorite bowls, garnish with sesame seeds & sriracha sauce (if desired). Serve an enjoy!
