But sometimes I want something that's sweet, but not over the top. This Watermelon Pizza is exactly that. It has a sweetness to it, but you aren't going to walk away from the dessert table miserable because you ate something heavy.

WHAT DO I NEED TO MAKE WATERMELON PIZZA

I have a feeling this is going to be your new favorite summertime dessert. It's incredibly refreshing, cures that sweet tooth, and is irresistible. Let's take a peek at what you need to get started:

HOW DO I MAKE WATERMELON PIZZA

STEP 1: PREPARE THE CREAM CHEESE LAYER, FRUIT, AND WATERMELON

In a medium bowl, beat together the cream cheese, powdered sugar, and vanilla. Mix until smooth. Prepare the fruit for decorating the pizza. Make sure fruit is washed, dried, and sliced (if needed). Pat the watermelon slices with a paper towel to help the cream cheese mixture stick.

 

STEP 2: ADD CREAM CHEESE

Evenly spread cream cheese mixture over the watermelon slices.

STEP 3: DECORATE THE WATERMELON PIZZA WITH FRUIT

Decorate as desired with fruit.

STEP 4: ADD CHOCOLATE, REFRIGERATE, AND SERVE

Melt milk chocolate chips with coconut oil in the microwave for 30 seconds. Stir well. Drizzle over fruit. Refrigerate until ready to serve. Best if served immediately.

CAN I USE DIFFERENT CHOCOLATE?

Yes, if you are out of milk chocolate or prefer something else, that's more than fine. Dark chocolate, semi-sweet, or even white chocolate would all be fantastic choices. Try out a variety of chocolates to see what you like best and go with that. 

WHAT KIND OF FRUITS SHOULD I USE

The options are endless when it comes to choosing fruits to put on top of the watermelon pizza. There are many to choose from, and if you go with what you like, you can't go wrong. Some ideas are:

  • Strawberries
  • Blueberries
  • Raspberries
  • Kiwi
  • Blackberries
  • Pomegranate
  • Cherries
  • Peaches
  • Mango
  • Pineapple

Keep in mind that is just a list of a few possible ideas. You can add any kind of fruit you like on top. There are no wrong answers as long as you are happy. 

CAN I SAVE LEFTOVER WATERMELON PIZZA?

This watermelon pizza is by far better when you can eat it right away. If that can't happen for some reason, you can save it for later. It will not be as tasty, simply because the fruit and watermelon don't hold up for a long time after it's prepared. You will need to keep it in an airtight container and in the fridge until you are ready to serve it. 

I recommend if you are throwing a gathering or something and want to make this, your best bet is to prep all the ingredients and keep them in the fridge separately. Then assemble right before serving. This will give you the best results.

  1. This is the ultimate summer treat right here! I LOVE this idea! I especially love the added chocolate drizzle on top! Nice touch!! Not to mention, it makes cutting watermelons so much easier!

  2. Such a clever idea! I wasn't sure how I'd like the chocolate but it's really good- like chocolate covered strawberries. I had a tupperware pie keeper I filled with ice, topped with the lid and set my plate on top to keep the melon nice and cold. All was eaten and enjoyed.

  3. I had my kids make this for their snack this afternoon. I cut the watermelon into a large round and let them do their own decorating and adding toppings, it was a great time and they loved the results.
