Happy Monday, I hope you had a great weekend! My weekend was packed with fun filled Easter activities. On Saturday I took my kids to an annual Easter egg hunt, then we spent the afternoon coloring eggs and making our annual Easter Bunny cake. I have to admit that I went overboard with making the hard boiled eggs for our project and found myself with a dozen left over. At first I was not sure what I would do them, then I remembered a favorite recipe: Delicious Curried Avocado Egg Salad. This is a quick and easy recipe that is perfect for lunches either by itself, in a sandwich, or on top of a bed of greens. The addition of curry is a great way to jazz up the egg salad recipe. Of course, I LOVE avocados, so I add them to any recipe that I can!

Ingredients

  • 1 Cup Mayonnaise
  • 1 tablespoon Dijon Mustard
  • 2 tablespoon White Vinegar
  • 2 tablespoon Lemon Juice
  • 2 teaspoon Curry Powder
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • ½ Cup Celery, finely chopped
  • ½ Cup Red Bell Pepper, finely chopped
  • 2 tablespoon Shallots, finely chopped
  • 12 Hard Boiled Eggs, peeled and coarsely chopped
  • 3 Avocados, peeled and cut into chunks

Instructions

  1. Whisk together mayonnaise, dijon mustard, white vinegar, lemon juice, curry powder, salt, & pepper in a large bowl.
  2. Fold in celery, bell pepper, and shallots
  3. Add chopped eggs and gently toss
  4. Fold in Avocado chunks and gently toss

  2. We do not eat hard boiled eggs so we gave ours all to family & people that will use them. Your egg salid on pumpernickel bread is so appealing! Normally you see it with light colored breads and the colors all mix but the with the dark bread everything stands out! I love it!
  3. Oooh, I still have a few eggs leftover from dying Easter Eggs. I love egg salad, but haven't ever added this much to it. I bet my husband would love this.
