Happy Monday, I hope you had a great weekend! My weekend was packed with fun filled Easter activities. On Saturday I took my kids to an annual Easter egg hunt, then we spent the afternoon coloring eggs and making our annual Easter Bunny cake. I have to admit that I went overboard with making the hard boiled eggs for our project and found myself with a dozen left over. At first I was not sure what I would do them, then I remembered a favorite recipe: Delicious Curried Avocado Egg Salad. This is a quick and easy recipe that is perfect for lunches either by itself, in a sandwich, or on top of a bed of greens. The addition of curry is a great way to jazz up the egg salad recipe. Of course, I LOVE avocados, so I add them to any recipe that I can!
Curried Avocado Egg Salad

Ingredients
- 1 Cup Mayonnaise
- 1 tablespoon Dijon Mustard
- 2 tablespoon White Vinegar
- 2 tablespoon Lemon Juice
- 2 teaspoon Curry Powder
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- ½ Cup Celery, finely chopped
- ½ Cup Red Bell Pepper, finely chopped
- 2 tablespoon Shallots, finely chopped
- 12 Hard Boiled Eggs, peeled and coarsely chopped
- 3 Avocados, peeled and cut into chunks
Instructions
- Whisk together mayonnaise, dijon mustard, white vinegar, lemon juice, curry powder, salt, & pepper in a large bowl.
- Fold in celery, bell pepper, and shallots
- Add chopped eggs and gently toss
- Fold in Avocado chunks and gently toss
One of my favorite ways to enjoy this delicious curried avocado and egg salad is on toasted pumpernickel bread...YUM!!!
