Due to the current situation, my family and I have been spending a lot of time together at home. One thing I have noticed, now that we are together all the time, is that my kids love to eat! So, I have been trying to keep nourishing foods prepped and ready to go for them!

One of their favorite things to have for lunch is egg salad. So, I made a batch of my delicious Curried Avocado Egg Salad for them to make sandwiches with. They love toasting a few slices of Arnold Oatnut Bread to make their mid-day meal. I enjoy making mine with Arnold Healthy Multigrain Bread.

Why use Arnold Healthy Multigrain and Arnold Oatnut Bread?

I love using Arnold Bread to make sandwiches! It may be called Brownberry Bread or Oroweat Bread depending on where you live, but it is all the same great taste from the same company. I purchase it at my local Walmart store. Lately, though, I have been using Walmart Online Grocery for pickup, which has been so convenient!

They offer a wide range of whole grain varieties that I feel good about using. Arnold Bread provides benefits from heart health to fiber goodness! I like all the varieties, but my favorite is the Arnold Healthy Multigrain Bread because it is a good source of fiber and it is made with several different wholesome ingredients like flaxseed and brown rice. I also like that it only has 2 grams of sugar per slice and it is free from artificial preservatives, colors and flavors.

My kids are big fans of the Arnold Oatnut bread. It is a bread that I feel good about buying and serving my family because it is packed with whole grains and contains wholesome ingredients like oats, hazelnuts and sunflower seeds.

How do I make the Curried Avocado Egg Salad Sandwiches?

There are just a few simple steps to making these delicious egg salad sandwiches on Arnold Healthy Multigrain or Arnold Oatnut Bread.

Step 1: Make the egg salad dressing

Start off by making the dressing for the egg salad. In a large bowl, whisk together the mayonnaise, Dijon mustard, white vinegar, lemon juice, curry powder, salt and pepper.

Step 2: Add in the veggies

Fold in the finely chopped celery, bell pepper and shallots.

Step 3: Add in the hard-boiled eggs and avocado

Add in the hard-boiled eggs and toss gently. Then, carefully fold in the avocado making sure not to mash it up.

Step 4: Toast the Arnold Healthy Multigrain or Arnold Oatnut Bread and assemble sandwiches

First, choose your bread, then lightly toast it. Place lettuce on top of one slice of bread, then add ½ cup of Curried Avocado Egg Salad mixture and a thick slice of tomato. Place another slice of bread on top. Cut the sandwich in half and enjoy!

This recipe is so versatile! You can add anything that you might enjoy to the sandwich! Sometimes I like to add a slice of red onion and a pickle. Also, if you are not a fan of curry, you can simply omit it and change it out for a spice you do enjoy. Tarragon goes great (instead of curry) in this egg salad recipe too!

Ingredients

  • Arnold Healthy Multigrain Bread
  • Arnold Oatnut Bread
  • 1 Cup Mayonnaise
  • 1 tablespoon Dijon Mustard

  • 10 Hard Boiled Eggs peeled and coarsley chopped
  • 2 Avocados pitted and peeled, then coarsley chopped

Instructions

  • In a large bowl, whisk together mayonnaise, Dijon mustard, white vinegar, lemon juice, curry powder, salt and pepper.
  • Fold in celery, bell pepper and shallots.
  • Add chopped hard boiled eggs and toss gently.
  • Fold in avocado taking care not to mash it.
  • Toast Arnold Healthy Multigrain Bread and/or Arnold Oatnut Bread
  • Place lettuce on top of one slice of bread, then add ½ cup of Curried Avocado Egg Salad mixture and a thick slice of tomato. Place another slice of bread on top.
