In a large bowl, whisk together mayonnaise, Dijon mustard, white vinegar, lemon juice, curry powder, salt and pepper.
Fold in celery, bell pepper and shallots.
Add chopped hard boiled eggs and toss gently.
Fold in avocado taking care not to mash it.
Toast Arnold Healthy Multigrain Bread and/or Arnold Oatnut Bread
Place lettuce on top of one slice of bread, then add ½ cup of Curried Avocado Egg Salad mixture and a thick slice of tomato. Place another slice of bread on top.
