Curried Avocado Egg Salad Sandwich

This Curried Avocado Egg Salad Sandwich made with Arnold Healthy Multigrain Bread or Arnold Oatnut Bread makes a fantastic lunch! It is an easy recipe to make and the addition of curry and avocado to egg salad gives it a delicious boost in flavor.

Ingredients

  • Arnold Healthy Multigrain Bread
  • Arnold Oatnut Bread
  • 1 Cup Mayonnaise
  • 1 tablespoon Dijon Mustard
  • 2 tablespoon Whtie Vinegar
  • 2 tablespoon Lemon Juice
  • 2 teaspoon Curry Powder
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • ¾ Cup Celery with celery leaves, finely chopped
  • ¾ Cup Bell Pepper finely chopped
  • 2 tablespoon Shallot finely chopped
  • 10 Hard Boiled Eggs peeled and coarsley chopped
  • 2 Avocados pitted and peeled, then coarsley chopped
  • Lettuce
  • Tomato Slices

Instructions

  • In a large bowl, whisk together mayonnaise, Dijon mustard, white vinegar, lemon juice, curry powder, salt and pepper.
  • Fold in celery, bell pepper and shallots.
  • Add chopped hard boiled eggs and toss gently.
  • Fold in avocado taking care not to mash it.
  • Toast Arnold Healthy Multigrain Bread and/or Arnold Oatnut Bread
  • Place lettuce on top of one slice of bread, then add ½ cup of Curried Avocado Egg Salad mixture and a thick slice of tomato. Place another slice of bread on top.
