How do I make the Chicken Corn Chowder?

This delicious chowder recipe is simple to make in just a few easy steps. Here is what you will need to do to make it.

Step 1: Prepare the vegetables and sauté 

Prepare the vegetables by chopping up the celery and onion. Dice up the red bell pepper and mince the garlic. Then, melt the butter in a large saucepan over medium-high heat. Add the onion, red pepper, garlic and celery and sauté until they are soft. This will take about four minutes.

Step 2: Add in chicken, corn, potatoes and spices and boil

Next, add the chicken broth, cooked cut-up chicken, frozen corn, diced potatoes, salt, pepper, thyme, and sage and bring to a boil.

Step 3: Simmer, whisk in tapioca and stir in cream

To finish up the chicken corn chowder, reduce heat and allow to simmer, partially covered, for 5 minutes. Whisk in the tapioca and simmer for 2 minutes until it begins to thicken.  Stir in the heavy cream and allow to simmer 15-20 minutes, until potatoes are tender.

Pro Tip: The Minute tapioca helps to thicken the soup but a slurry made of 1 tablespoon of corn starch mixed with 1 tablespoon of cold water can be used instead. If you want it even thicker additional slurry can be used.

Can I store the Chicken Chowder?

Yes, it can be stored in a covered container in the refrigerator for up to 3 days. Because of the cream base, I do not recommend freezing it.

Ingredients

  • ¼ cup butter
