How Do I Make This Keto Breadsticks Recipe?

After you have your ingredients gathered, you can start preparing your breadsticks. Follow these simple instructions for making your own flour-free breadsticks at home:

Prepare the Ingredients

Before you can blend your ingredients to make the breadsticks, you will need to do a little bit of prep work. Start by heating the cauliflower rice in the microwave according to the package instructions. While the rice is cooking, heat the olive oil in a small skillet on the stove. When the oil is hot, add the garlic and cook until fragrant, which usually takes around one minute. After the garlic is cooked, remove it from the stovetop.

Combine the Ingredients

When your garlic and cauliflower are cooked, combine the two ingredients in a large bowl with the eggs, ½ teaspoon of Italian herb seasoning, salt, pepper, and three-quarters of the mozzarella cheese. Stir to combine all the ingredients until they are well mixed and sticky.

Make the Breadsticks

Cover a baking dish with parchment paper and spray the paper with cooking spray to prevent sticking. Spread the cauliflower mixture into the prepared dish, making sure cover the pan in an even layer. Place the breadsticks in the oven to bake for 30 minutes, until the mixture begins to brown.

While the breadsticks are baking, line a baking sheet with foil or parchment paper and spray the liner with olive oil cooking spray. When the cook time is up, remove the baking dish from the oven and place the baking sheet on top of the dish. Flip the dish upside down so the cauliflower breadsticks are transferred the baking sheet. Return the sheet to the oven to bake until the top is golden brown, around 10 minutes.

After the breadsticks are golden brown on both sides, remove them from the oven. Sprinkle the remaining shredded mozzarella cheese over the top of the breadsticks, then top with the remaining Italian herb seasoning.

To keep the dough from sticking to your hands as you press it into the baking pan, take a second to grease your hands with olive oil or nonstick cooking spray. Instructions

  • Preheat the oven to 350F. Line an 8 by 8-inch or 9 by 9-inch baking dish with parchment paper. Spray the parchment paper with olive oil cooking spray.
  • Put the cauliflower rice in a large microwave-safe bowl and microwave for 8 minutes on high. Cool slightly.
  • Meanwhile, heat a small skillet over medium heat. Add the olive oil and once hot, add the garlic. Cook until fragrant, about 1 minute, stirring constantly. Remove from the heat.
  • To the bowl with the cauliflower, add the garlic, eggs, ½ teaspoon dried Italian herb seasoning, salt, black pepper, and ¾ of the shredded mozzarella. Stir to combine.
  • Spread the cauliflower mixture into the bottom of the prepared baking dish, spreading it out evenly.
  • Bake until the loaf is set and starting to turn golden, about 30 minutes.
  • Line a baking tray with foil or parchment paper and spray it with olive oil cooking spray. Place the prepared baking tray on top of the baking dish and flip it upside-down, so the cauliflower loaf is now upside-down on the prepared baking tray. Bake until golden, about 10 minutes.
  • Spread the remaining ¼ of the shredded mozzarella and the remaining ¼ teaspoon dried Italian herb seasoning on top.
  • Broil a couple minutes until the cheese is melted and golden in spots.
  • Serve warm, topped with Parmesan and parsley along with marinara sauce if desired.

Notes

Cauliflower Rice: You can use store-bought fresh cauliflower rice, or make your own cauliflower rice. To make your own, grate fresh cauliflower on a cheese grater. You will need to grate about half of a large head of cauliflower (about 6 ounces) to get 3 cups of cauliflower rice for this recipe.
