The weather has really warmed up over the past week here in Maine. The kids and I have been enjoying spending more time outside. After being out in the heat, it is nice to enjoy a frozen treat. The other day, I made Creamy Orange Pineapple Popsicles and they were a hit. So, today I tried something a little different and I came up with this Real Fruit Rainbow Popsicle Recipe.
Everyone love them! The combination of fruit with lemon-lime soda was so refreshing. This quick and easy popsicle recipe will definitely be on repeat all Summer!

All you need is fruit and lemon-lime soda to make this delicious treat! Here is what I used to make the popsicles:
- Lemon-Lime Soda
- Grapes
- Raspberries

How do I make the Real Fruit Rainbow Popsicles?
There are just 3 simple steps to make this fun summer dessert.
Step 1: Layer the Fruit
Start off by layering the fruit in the popsicle mold. I started off with the raspberries, then added the pineapple. Next, I placed the green grapes in the mold and finished it off with the blueberries to give it the appearance of a rainbow.

Step 2: Add the soda and freeze
Top the fruit with the lemon-lime soda leaving about a ½ inch of space at the top to allow for expansion when it freezes. Place the popsicle sticks in between the fruit pieces and place in the freezer. Allow a minimum of 6 hours to freeze or keep them in the freezer overnight.
Step 3: Remove from molds
After the popsicles are frozen throughout, remove from molds and enjoy!
*Pro Tip: Pour hot water over the OUTSIDE of the mold to make it easier to remove the popsicles.

A few variations to try:
*Try adding different types of fruit, like Kiwi, strawberries, cantaloupe and watermelon
*Instead of lemon-lime soda, try using flavored seltzer for less sugar. Lemonade or fruit juice are also good alternatives to try if you do not have soda on hand.

Real Fruit Rainbow Popsicle Recipe
Equipment
- Silicone Popsicle Mold
- Popiscle Sticks
Ingredients
- 3 Cups Lemon Lime Soda
- ½ Cup Grapes diced
- ½ Cup Raspberries diced
- ½ Cup Pineapple diced
- ½ Cup Blueberries
Instructions
- Layer the fruit in the popsicle mold in rainbow color pattern
- Top with lemon lime soda leaving a half inch at the top to allow for expanding when the popsicles freeze.
- Cover the popsicles and add in the popsicle sticks in between fruit pieces
- Put in the freezer for a minimum of 6 hours or until frozen (preferably overnight)
