Zucchini Pizza Casserole is a family favorite & perfect for a busy weeknight! All you need are 4 ingredients to make it: zucchini, pizza sauce, cheese & pepperoni.

Ingredients

medium zucchini
1 ¼
cup
pizza sauce
spaghetti sauce works well too

pepperoni slices
halved
1 ½
cups
mozzarella cheese
Instructions
Preheat oven to 375 degrees.
Grease a 13x9" baking dish with nonstick cooking spray, set aside.
Wash and chop the zucchinis into bite sized chunks and place in a large mixing bowl.
Pour in the sauce and toss to coat.
Dump the zucchini/sauce mixture into the prepared baking dish and top with half of the pepperoni.
Bake in the preheated oven for 30 minutes.
Remove from the oven and top with the cheese and remaining pepperoni.
Return the baking dish to the oven and bake another 5-10 minutes or until the cheese is melted.
Serve hot!

NOTES: Feel free to add your favorite pizza toppings and customize it to your taste with different meats and veggies!
